1 pound of ground meat, 15oz can black beans, cup shredded carrot, 2 tbsp cup flaxseed, 1/2 cup breadcrumbs, 2 beaten eggs to bind, two hard boiled eggs in centre of loaf. Seasoned with garlic powder and pepper.

Not difficult. Ground meats, onion and seasonings mixed in a food processor; baked in a water bath; chilled; sliced with electric knife and briefly fried in a dry skillet to brown a bit. Will definitely make again.

Yesterday, we had double digit temperatures! Time to put up the Xmas lights on the house, trees, etc.
Put some Greek seasoned pork chops into the sous vide, then seared just before eating. Sauteed mushrooms, grilled zucchini, and sweet potato fit the supper bill nicely.

The weather flipped quickly, and it was blustery and single digit temps today. Tried to get the outdoor work finished but it gets dark so early these days!
It was too dark and cold to BBQ outside, so lamb chops were done on the indoor stove top grill. I love checking out Safeway meat counter early in the morning. Picked up the lamb chops with $5.00 discounts, which makes for a better price. These were just seasoned with Montreal steak spice, and they were so tender and juicy. Cooked up brown basmati rice with cumin seeds, and peas. Made mint sauce with fresh mint and season sushi vinegar.

Grilled merguez lamb sausage, with a couscous salad with dried cranberries, green onions with lemon-garlic vinaigrette.  Dipping sauce of harissa yogurt.

Quesadillas made with home made corn tortillas. Fried on one said only (so that the we can also enjoy the soft texture). Some had fire roasted chilies added, the others had grilled corn (not pictured, to spare the faint of heart).

Frijoles refritos. Salsa verde.

Also had gyros here, although I had mine in the form of a salad. My tzatziki sauce was a bit thick; I think I squeezed too much water out of the cucumber. Heavy dose of feta on top, and a few stuffed grape leaves around the edges.

I asked Charlie what he thought about meatloaf tonight.  He said OK but didn't sound very enthusiastic  about it.  So I said how about some pasta with ham and a cream sauce and he liked that idea better.  The original recipe called for bucatini and pancetta but those aren't all that easy to get here in Kansas, especially not in an hour or two. So I substituted bacon and ham;  they are cheaper too. It probably didn't taste anything like it was intended but it was still good and filling.
