Actually the texture was awesome...  the fillets are 3-4 mil thick

Birthday dinner yesterday.  Started with some decent oysters

Pork, maybe a bit more rare than I would like.  Roast potatoes, Kenji method in duck fat.  Broccoli rabe, garlic, and pine nuts.  Bottle of Valpolicella, which went very well.  I blame the NY Times.

Squid with snow peas - a classic Chinese combination. Also contains garlic, ginger, chilli, soy and oyster sauces. Squid fried for mere seconds until opaque. Melt in the mouth.

I've never worked out why, but snow peas are known in Chinese as 荷兰豆 (hé lán dòu) which literally translates as "Holland beans".

I cooked a couple of Spencer steaks indoors on a cast iron griddle. They set off the smoke alarm but turned out good.  I put a potato in the microwave, pressed the 'potato' button and was surprised at how fast it  went. The tomato will be one of the

last from the garden this year.
