@chefmd, I'm so sorry - and best wishes for your travels, and your father.

 

I myself am on the verge of some kind of breakdown for international travel + family reasons, having JUST returned from a hellish week to the wilds of British Columbia in Canada, where my brother in law has committed suicide, necessitating what has been a very upsetting trip. As a result of the stress, the jetlag, the grief, the shock and the general psychic distress of all combined, my dinners lately have basically consisted of things like this -  a Rum and Rum and Rum and Rum and Raisin; Flor de Cana aged rum, Mount Gay Barbados rum, Sailor Jerry spiced rum, a rounding of treacly Pedro Ximenez, and giant, fat golden raisins that I've been macerating in rhum agricole for nearly 2 years.

One day soon I'll cook again properly, as I struggle to find my new normal.

@rarerollingobject, I am sure it's a sad chaotic time. Don't forget to care for yourself and those around you. Sorry for your loss.

So sorry for your loss.  Young life incomplete is always tragic, whatever the reason.  I myself succumbed to drinking martini last night knowing all too well that it will put me into a deep sleep...only to wake up at 3 am.  DH shared stale bagel with me like a champ prior to sunrise.

@chefmd – so sorry for your dad’s health issues.  Will be thinking of you!

 

@rarerollingobject – oh, how horrible!  That happened to us (BIL, also) and there is just nothing anyone can say or do to fix things.  So time and some good liquor are not bad ideas!  Love and light right back! 

 

Company for dinner last night.  I did @Norm Matthews' Korean Chicken as thighs instead of wings:

These were just delicious.  I brined them for one day and they were very, very moist.  The crunch of the coating is amazing and the sauce is sweet, tangy and just barely spicy with ginger, soy, brown sugar, vinegar, and a little hot sauce.  Thanks so much, @Norm Matthews!  I served it with a slightly too starchy, but still good tasting fried rice:

It's been around a year since I did a brisket in the smoker. It only took 7 hours. I was surprised it finished so soon.  I smoked it with apple wood at 270 most of the time. It got up to 300 at the end though.  I just realized that my smoker just turned 5.  BTW prime brisket at Costco was only $3.29 a pound.

Turkey london broil cooked on the grill, had marinated it in lemon juice, ponzu, spices, and a little honey and agave syrup for about 90 minutes. Also made sweet potatoes, we micro a bit to start them cooking, then roast on the grill. I love how the flesh browns just under the skin and the natural sugar comes out. Stir fry of some veggies.

Chicken & coconut curry from Kerala, edamame & spinach poriyal, mixed veggie masala, paratha, ghee rice. The extras are dill raita, date & tamarind chutney and ginger pickle.

Oklahoma Joe was bought by Char Broil.  They put the company out of business and applied the Oklahoma Joe name to one of their cheap imitations.  Mine is identical to the original Oklahoma Joe 18-inch smoker but it is an Horizon, built by a company run by Joe's brother who was a manager in the original company.

Same here, but it's going to be 90-ish today and tomorrow; much too hot for my taste especially so early in the season.  I easily get tired of summertime foods, they're so much less interesting to me than the dishes I make in winter.  I'm not a big griller (that was my late hubby's job); I wish I enjoyed it more since I have all the equipment but it's just not much fun when it's just for myself.
