The Vegan Mungbean Tortilla

Wild Ghost rice Bineshii/ RG yellow eyed's/ Mung's sprouts/ cilantro red onion/ Mama Lupee low car tortilla ( light fry in pan with oil)/ Romaine lettuce base

I like an Ortega sauce it adds just a touch of sweetness--again very wholesome

Anything with Ghost Bineshii is great.

Leftover lunch

Clearing out for the upcoming Chinese New Year.

Freezer stock made from a  Beijing Duck carcase and stray vegetables (discarded afterwards). Added leeks, garlic and carrots to the soup, then some some pre-cooked honey roasted duck breast (also from freezer).

Added some Vietnamese fish sauce near the end to counteract the sweetness of the honey.

Earlier this week I saw a couple photos of Santorini and thought they were fake. I looked it up. Greece got some freak weather last week. Even Cycladic islands were deep in snow. I found 2 of my own photos taken back in September to compare. The difference is stark. This was Santorini on Monday the 24th: photo one, photo two.

A very different Santorini in September:

Catching up with January! This month’s lunches out were nothing new, just more of the same - which is very good, in my opinion!

The month began with a burger and fries on Galveston Island’s West End, at Nate’s in Jamaica Beach.

Up next, was an avocado topped burger with cheese fries at Houston’s Hobbit Cafe.

Then, back to the Gulf Coast for Fried Shrimp -

@blue_dolphin – your focaccia is absolutely gorgeous!

@robirdstx – those shrimp plates are amazing.  I wish we could get a meal like that near us!

The 27th was Jessica’s 38th birthday.  Mr. Kim had to work all day so she and I took a drive over to Norfolk/VA Beach area to sample some Filipino food.  She has some friends who are either Filipino or married to a Filipino and live down there and she got recommendations.  The first place we went to was Glory’s Bakery in VA Beach.  We got lumpia and pizza bread:

IMG_8021.thumb.jpg.b47d82969dbd2ce8526cdc8676979837.jpg

The lumpia were delicious and the pizza bread was VERY cheesy:

IMG_8024.jpg.f839de7022f0b36ce86f57f3fb6413c4.jpg

Maybe a touch TOO cheesy.  Jess felt a bit queasy after eating a few bites.  We also got some pastries – a couple of turnovers (pineapple & cream cheese and a coconut) and a perfect elephant ear-type thing.

Next was Jollibee which is a multinational Filipino chain restaurant.  We got a piece of fried chicken w/ gravy and spaghetti.  The spaghetti was distinctly different looking, with chunks of ham and hot dogs in the sauce and what looked like American cheese on top:

IMG_8033.jpg.63b6a20ea11ab036659cbdbffac06563.jpg

The chicken was really good, as was the gravy that went with it.  I’d rate the chicken just barely below Popeye’s and definitely above Bojangles.  The spaghetti was just not to our liking at all.  The sauce was decidedly sweet with, we found out, banana ketchup.  Even Mr. Kim who hates waste and eats almost anything voted to chuck it when we got home.  We also got a banana/jackfruit langka or hand pie (similar to McDonald’s apple pie, but with really good pastry):

IMG_8035.jpg.a1e1014ae4f96c015d7687adc139d856.jpg

Our next stop was Felynn Restaurant.

IMG_8038.jpg.eb05a3f55c2f99e06687d1c2ce3119e4.jpg

IMG_8039.jpg.d8e740219030a975fe4bd56ca388b9af.jpg

We opted for pancit, lumpia, and a BBQ pork skewer:

IMG_8041.jpg.a0ed26d272f12276d0f552c27a326d9b.jpg

They have an amazing menu, and it would have been fun to be with one of her friends so that we could have had a description of everything.  Jessica tried to ask and when we heard “pig’s face” we decided on something we knew.  The pancit and the BBQ were both delicious.  The lumpia was good, but not as good as the first place we went to.  The desserts were NOT a success.  The fried wrapped banana had a strong burnt taste:

IMG_8042.jpg.70a89c068753387eeef5d3025a965cb5.jpg

It was wrapped in foil and stored in a hot case.  I think that the sugary sauce must have dripped down the sides and burnt while sitting in the case.  We also tried nilupak – cassava, milk, sugar, butter, and string coconut:

IMG_8044.thumb.jpg.8cabacb98cc3dfa18778ed92d1108549.jpg

Not much flavor and not a good texture for us.

This is Jessica being polite:

Ube bread:

On Saturday, we continued to celebrate her birthday. The three of us went up to Wheaton MD to our favorite dim sum place, Hollywood East for brunch.  Fried crab claw shrimp ball:

IMG_8110.thumb.jpg.42369c20329aef21784f63cea8d99f4f.jpg

Just a giant ball of chopped and minced shrimp with a little crab in it.  Inexplicably stuck with a tiny little crab claw.

Egg roll:

IMG_8108.jpg.e99efd18e142ba6c62d6c9fc2fe8f1ff.jpg

For old times’ sake. Best one I’ve had in many years!  I’ve been yearning for the egg rolls of my youth – stuffed full of fairly dark cabbage, tiny shrimp and roast pork with a shatteringly crisp skin.  Just about every Chinese restaurant we frequented in Arlington VA and Chinatown DC had them, but they are seemingly impossible to come by now in Richmond.  Even at our favorite Chinese restaurant here, I’d almost bet they frozen.  While not perfect (it needed pork and to be fuller of vegetables), this one was really good – super crisp vegetables, shrimp and a perfect skin:

IMG_8109.jpg.9f8ceefcfeffb5ce571adfe90aaa551c.jpg

Shrimp blossom rolls:

IMG_8106.jpg.a66e7185c5d6678529e6cff686ee950c.jpg

Nicely crunchy with a minced shrimp filling.  We ended up ordering a LOT of things stuffed with minced shrimp😊.

Steamed pork and shrimp shu mai:

IMG_8104.jpg.d607b8d3e57b2f916c0cad1bbc04c083.jpg

These had a distinctly burnt flavor.  Mr. Kim didn’t mind, but Jessica and I were really put off and didn’t have more than a bite.

Golden Roast Pork buns:

IMG_8091.jpg.e5251173f0d88649715db18b22b452c6.jpg

These were lovely, as usual.

Baked roast pork croissants:

IMG_8099.jpg.ea88645399c3fb861e3f870890cafb32.jpg

The flavor was good, but the pastry was tough and flabby.

Chicken and ginger dumplings:

IMG_8096.jpg.a91bc3b3acdac8363d361a13ee332b47.jpg

Delicious.  One of the best bites of the meal.

Bacon rolls stuffed with minced shrimp

IMG_8095.jpg.82a0fcac4fba8aa6221c4b99b38bfcf2.jpg

Jessica thought that the bacon was overly smoky.

Shrimp toast:

IMG_8094.jpg.6406d4a5774145d9f5a6237351293f65.jpg

Shrimp rice noodle crepes:

IMG_8093.jpg.74c46ee84e8541cffdb010233f8ee091.jpg

Perfectly tender and delicious.

Lunch after church on Sunday at a local deli.  Mr. Kim’s eggs and bacon with home fries:

I love mother/daughter days! Both of my daughters are much more adventurous eaters than my husband, so we have fun exploring new places and revisiting places that my husband would not choose to go. (According to him "all Thai food has a solvent taste"... WTH?) Happy Birthday to Jessica!

Shrimp blossom rolls:

Nicely crunchy with a minced shrimp filling.  We ended up ordering a LOT of things stuffed with minced shrimp😊.

Steamed pork and shrimp shu mai:

These had a distinctly burnt flavor.  Mr. Kim didn’t mind, but Jessica and I were really put off and didn’t have more than a bite.

Golden Roast Pork buns:

These were lovely, as usual.

Baked roast pork croissants:

The flavor was good, but the pastry was tough and flabby.

Chicken and ginger dumplings:

Delicious.  One of the best bites of the meal.

Bacon rolls stuffed with minced shrimp

Jessica thought that the bacon was overly smoky.

Shrimp toast:

Shrimp rice noodle crepes:

Perfectly tender and delicious.

Lunch after church on Sunday at a local deli.  Mr. Kim’s eggs and bacon with home fries:

Since my shrimp cake wouldn't hold together. I encased it egg.  These I put together and froze ( earlier in the yr ) and thawed the first one , and tried to pan fry. turned into a fish Maid-rites ( which wasn't to bad )  "  Maidrite= loose meat sandwich

Remedy,  patty as good as I could.  Used a egg,  put half a beaten egg in a tupperware container (  just larger than the cake ), place the shrimp cake and add the rest of the egg.  covered microwaved 1 min to set the egg.

pan fried in all the  egg love/Butta

After breakfast I went straight to a certain well-known producer to try my first traditional Oaxacan chocolate drinks.

100% pure chocolate in one cup, the other one has milk and vanilla.

One of the typical Oaxacan breads to eat alongside chocolate drinks. This one is called "yolk bread". Super fluffy and only mildly sweet.

Chocolate is dissolved in the kitchen and the server uses a wooden tool to "beat" it until frothy. Then he pours it into your cup.

Can't wait to go back here after breakfast.

@chefmd, whilst walking past boarding gates at MEX seeing listed destinations I was thinking to myself there's nowhere else I would rather be right now. Because, ballenas/whales!!! Feels so good to be back in Me.Hi.Co!

I forgot how many chicken livers you can buy for $1.83.  Definitely more than we could eat for lunch! Fired chicken livers over basmati rice with a side of fresh green beans almondine.  The livers were smothered with copious amounts of pan drippin gravy.
