A carbonara-like concoction courtesy of a @Chris Hennes photo from his New Orleans trip:

 

@Smithy asked for a bit more info and @Dave the Cook offered a link to a recipe that @JAZ created after eating at the same New Orleans establishment some years back. 

 

Chris reported that the piece on top was guanciale, an ingredient that my pantry is lacking. I cut some some country ham into slivers and crisped them up.  Not a bad sub since I got a bit in each bite.

@blue_dolphin – I would give my next 6 meals for a soft-shell sandwich!  And, as always, your poached egg is perfection!

 

On Saturday, I made use of some the dozen soft cooked eggs I accidentally made in the IP.  Gently reheated in the microwave and buttered, they were actually quite good.

Post church lunch at a favorite soul food place.  Jessica got the chicken sandwich and fries:

These were delicious – I’m pretty sure they were made from fresh salmon, not canned. 

 

I got the seafood dinner:

Whiting, crabcake, shrimp, mac and cheese, candied yams, and cornbread.  Cleanest whiting I've ever had and not loaded with bones.  Everything was as good as it always is.  We have gone back to not eating in most restaurants – we either eat in the car or take it home.  But they have a side seating area that was completely empty, so we felt comfortable eating there.  Everyone – staff and folks waiting to pick up their food – was wearing their masks.

I would have liked @Kim Shookgrilled cheese and tomato soup for lunch, since I'm at the office had to make do with cream cheese on a lousy supermarket bagel, served with tomato soup from a carton. The original plan was to melt some provolone over the bagel halves in the toaster oven, but it was moldy when I pulled it out of the fridge. But I can only dream of that delicious Soul Food spread!

@liuzhou light.. ha!  Everything looks great.  How does the fancy luosifen compare against the street version?  Are those baozi the ones called "doorknobs" or something like that?  We had them in Beijing and while I burned the crap out of my mouth on one, I loved it.

 The luosifen was disappointing. I'm hitting the streets again tomorrow.

 

I didn't eat the baozi. I was told they were meat (.e. pork), but the bun itself was sweet. No thanks!

 

Still a nice social gathering.

I often find that restaurant versions of street dishes are much better in the street.

Your IKEA sells alcohol?  Damn.

 

I just finished my last bottle of Aquavit at a polar plunge last weekend.  I will miss it.   I haven't seen it on the shelves here for a couple years, even pre-C&^*&&((d.

Total Wine has Aquavit  ( two brands ) in many of their stores.

 

The stuff I like is OOS @ Total Wine and Bevmo local to me.  >:(.   I find it hard to believe there are that many Danes and saunas soaking up the supply here.

 

There's a very good liquor store called Trevor's in Scottsdale.  I will go there to see if they have it, they stock nice stuff.

The IKEA Snaps is actually pretty good. Their dill & elderflower ones are my favourites, while for caraway I prefer German brands …

 

They also sell Cider (both from apple and pear), several beers and Glögg, their mulled wine (both red and white, currently discounted 😝).

The marinade: chipotle, Madeira, my own mix of "fajita seasoning". Cooked SV then finished in the oven till crispy.

The second version is a bit different. The wings were steamed in the marinade.
The marinade: fermented black beans (not rinsed, roughly chopped), Taiwanese "BBQ sauce", salted mustard and Madeira wine.

@Kenneth, maybe the wife likes these chicken wing lollies. She doesn't want to deal with the bones? I crush them with my teeth and suck out all the marrow!

 

Stayed at this family-run pineapple-mango farmers' ryokan on Iriomote island for a few days and enjoyed every single home-cooked meal there.

All of those look great!  I'm curious about the mix of chipotle and madeira... an interesting combo.  She actually really liked the wings I made last night - she definitely prefers the drumette to the flat - which is good for me since I prefer the flat!  I think one problem she has with wings in general is that a lot of them are too goopy with the sauce, or the skin's not properly done.  Mine were a little sticky, but definitely not goopy so that wasn't an issue.
