Dearly Beloved. 

We are gathered here today to fondly remember that time CCST went low Carb. She fought hard to the end, battling a dire 7 days with all her might. 

But it wasn't to be.

Last night's dinner. The dough I made on Saturday - half went into the fridge for an extended rest. And half of that...

Was used for this 1/4 sheet pan focaccia. Half tomato/cheese, half classic rosemary. All dusted with parmesan when it came out of the oven. Plated...

Happy Birthday, @TicTac!  🎂 🎈 🤡

 

Dinner started with a salad:

It was just my basic salad with the addition of arugula.  What a difference.  NOT boring.  Garlic toast pizza and CSO bake/steam broccoli:

We had everything on hand for the pizzas – sauce, pepperoni, frozen garlic toast.  All except mozzarella cheese.  We did have string cheese, which is mozzarella, so I used that.  I discovered, to my surprise that string cheese doesn’t melt.  As you can see from some of the ends of the strands, it does burn, but no melt.  Still good, though. And improvising is the name of the current game.

Thanks :)

No recipe I'm afraid. Some fresh chilli, garlic, parsley, toasted cumin and coriander seeds, a touch of cardamom, salt. All pounded in a mortar and pestle. Than I add lemon and olive oil.

FWIW, my GF has spent most of the past couple of years on some variation of the Atkins/keto theme. Her weight remains unchanged.

I have been eating just a balanced diet, heavy on the veg (and lots of legumes and whole grains, because that's what I like). I've shed 10% of my starting body weight, and it's staying off. So, you know...no one plan works for everybody. Sooner or later, you'll find what works for you.

Happy birthday, @TicTac! Superb birthday dinner, if you did have to do it yourself.

 

I've got to shake myself out of this cooking rut. If it has not been pre-packaged junk food in the past week, I haven't eaten it. I did at least pick up a rotissiere chicken today, so that'll be tonight with...something.

Thankfully my low carb role is more of a supporting one! Mr CCST is one of those 'watch me lift heavy things' people. He goes low carb to bulk up rather than loose. Apparently it's easier to stick to if I'm not eating crisps in his ear 😅

A creamy Tomato Bean soup with some baby spinach.  Something new and very tasty.

Added delicious toasty Carbs for dipping.

Where do you source your saba? Sadly no longer in house with proper grapes to make my own
