Mrs. C pan-fried sablefish for me, and trout for her

Stir-fried broccolini and green beans with a sauce of garlic, roasted chile paste, fish sauce, and chicken stock. I had fresh basil leaves ready to go and forgot to add them. Oh well, there is always breakfast . . . :rolleyes:

I found a piece of Alaskan king salmon in my freezer. It was defrosted overnight and salted for the day, before making:

Salmon and hijiki rice. With some stir fried bok choy of some variety, with ginger, garlic, scallions, soy and oyster sauces.

 

Beautiful Donabe. The Mishima decoration looks very Korean. Of course the Japanese pottery industry started with "recruiting" Korean potters...

Prawns (not shrimp) stirred fried with garlic. chilli, Sichuan doubanjiang, Chinese chives, coriander/cilantro and culantro. Rice.

It's been a heck of a week here.  My mom came on Sunday for a visit!  She got here around 3 in the afternoon then, a few hours later, a really really bad storm hit.  100 mph winds.  Tornado headed right for us.  It lulled and then turned into a derecho. Scary stuff.  House is ok.  Major amount of trees are not.  Farmers had to replant about 25 acres worth of corn yesterday due to it all breaking off and/or just plain being blown out of the ground.  Lots of work to do but we're ok and house is ok and furry babies are ok.  That's all that matters.

Made a board so mom would have something to snack on when she got here.  I made salami roses 😁.  Yes, I was proud of myself. 🤣

Then the storm hit.  No power, no water.  Very late dinner --after calling/receiving many calls/texts checking on us.

Very lucky to have a gas stove so I lit the burner and fried up some chicken wings, steamed some asparagus  and had cold cheesy cauliflower that I had already made in the IP.  And wine.  A LOT of wine.

Got up at dawn and worked until it became to brutally hot and humid.  Then came inside to the hot humid house lol.

 

Needed something that I could again just use the burners of my stove.  Thawed out a bucket of cioppino, made some pasta and a salad.  Grateful to have had that in the freezer.  And grateful to have a generator that kept said freezer (s) running.

Power came on late Tuesday afternoon.  Thank you to all the hard workers that worked day and night to make that happen.  Power poles were snapped in half like twigs for miles.

 

I could use the CSO!  And turn on the water and wash dishes!  And the air conditioner was running!  Heavenly.

 

So, eggplant lasagna and more garden asparagus.

Next night I did Larb and made more drunken noodles using those Konjac noodles.

That was supposed to be moms last night here, but because everything was so crazy and stressful, she decided to stay one more day so we could just hang out and have a "normal" visit.  Luckily we had plenty of champagne and wine to get us through lol.  I'm so glad she was here....she helped a ton.

 

For her last night I brined a chicken the day before and Ronnie smoked it.

It's a "snow day" here on the Manitoba prairies 😞
Good time to catch up on posts, but more importantly, I need eGulleteer's expertise.
I haven't cooked these for ages, mainly just sauteed in butter.
What is / are the best way (s) to enjoy this gift I just received from a friend?

Coincidentally i have some morels from the market.

here is what i do.

 

soak in lightly salted water for half an hour to help flush out any bugs.  Rinse a few times in cold water to clean.  I hope yours are relatively clean.

then i just trim off any dried bites, dry,and sauté gently in butter and olive oil for a good ten minutes to ensure they are well cooked.  Then i put them on a sheet pan and freeze so i can keep them separate that way i can just get how many i need.

to night i am mking them in a light cream sauce with homemade cavatelli.

Thank you so much.  It was so so good to have her here, but I for sure hated that this happened.  It was scary and I don't wish that for her ever.

Now that's a really good friend.

If those were sitting in front of me I would dehydrate most of them for future use.

Try using some in a risotto. Good sauteed them incorporated into scrambled eggs.

They can also be stuffed. Just make sure you clean them well to remove any grit.

Lots of possibilities.

a few days ago the thought of lasagna briefly crossed my mind and left quickly since I didn't think cooking and baking all morning this time of year was a good idea.  Then yesterday Charlie said "Dad you haven't made lasagna in such a long time.  Would you make some soon?"  Today was cool all day so I made it this morning.  It was done about two thirty.

Smash burgers with homemade burger sauce, charred Vidalia onions, brioche bun. Schweid & Sons makes some great burgers. 

Cornmeal cake with whipped cream and strawberries we got from a farm in the next town over. They are so tasty!

Yunnan style elk with herbs (mint, Thai basil, rau ram, sawtooth coriander from the garden plus some green onion) with sticky rice (which probably could have soaked a little longer) and

Steak salad with lemongrass, mint, basil, garden tomatoes, cucumber, shallot, long red chiles, and butter lettuce. Sauce was sauteed garlic mixed with lemon and lime juice, fish sauce, black pepper, and sugar. Strip steak was marinated with garlic and soy sauce, grilled rare, sliced, and then finished in the warm sauce. Topped with crushed mixed nuts after picture time.

 

I would happily eat Asian meat salads every warm summer day.

Some meals this week- some quick with flower planting  taking most of my attention:

Picked up a piece of marinated Sterling Silver sirloin roast. It looked well marbled when I cut it into chunks, but I think all the marbling melted off. Haven't learned my lesson yet to only use beef short ribs for stew. LOL! Made in the IP, and was ok. But I hate shredded meat in stew!

We've been getting beautiful asparagus from a nearby Hutterite colony. We've been steaming them mainly. Made my first feed of Morels, dipped in egg and milk, and coated with cracker meal. These were deep-fried and was great! Sauteed some shrimp with Montreal Steak Spice, and cooked up Jasmine rice.

Had Mango Chili dip for the morels, but was best eaten nekkid;-) Drizzled Maple Coffee Balsamic on the asparagus.

Had company for supper tonight. Citrus Marinated Roast Chicken was on the menu, with mixed veg and roasted baby taters. The juice from the pan was delicious!

Our traditional Sunday dinner ( when it’s not a curry !! ) A roast, this time roast belly pork with lots of vegetables including pumpkin , rough apple sauce and gravy.

I had the good fortune to have a couple of meals out this week. We have a new place in my little area. I met friends at Osteria Bianchi for Happy Hour the other night. I had their Pizza Finnochio and it was fantastic. Took home half, which I had for another night.  

 

Yesterday after we decorated family graves, we had a late lunch in Independence at Ophelia's. I did not take photos but had a delicious brunch item It was a thyme and cheddar biscuit that was topped with cheese, coconut chicken, thick crispy bacon, an over easy egg and drizzle of hot honey. It was delicious and enormous. I'll be having the rest for a supper. We followed lunch with cocktails at a little place on the Independence Square. The Sentinel Room  is a very small intimate bar in the old newspaper building. Delightful people and delicious cocktails. Did not take many photos but here are my BIL's smoked old-fashioned and my sister's champagne cocktail of some sort. In taking lots pottery classes I had a Japanese instructor.  I married a Korean and one of her friends told me that a back at that time a 'joke' was for one Korean potter to tell another "Quick, wash your hands.  Japanese soldiers are coming.

 have you tried "velveting" the beef for that salad?  looks scrumptous!

we have a "Mongolian" dish - uses ramen+veggies - that I top with velveted beef.

strips coated/tossed/left standing in corn starch followed by a fast pan sear in shallow oil.

 

the beef really stands out in a "salad type" dish
