Breakfast 2024

So I take most of these "dinner for breakfast" meals to work for lunch.

My husband is somewhat the same although he doesn't get the meals that Moe does! He eats a pretty hearty breakfast, no lunch and usually a pretty light dinner. I usually have toast and an egg or cereal and fruit for breakfast, no lunch and the same light dinner. Most days. I do however like cold pizza for breakfast!

Yesterday's and today's breakfast

Eggs cooked with king oyster mushrooms, Thai chilis, green onion and cilantro with grape tomatoes, orange and grapefruit mix and toasted baguette.

This sandwich doesn't have an official name, as far as I know, so I'll dub it the 'Polish Western'. Eggs, garlicky Kielbasa, peppers, mushrooms, green onions, aged cheddar and lettuce on toasted WW with the last of the Xmas tangerines. Should get me through a few shoveling sessions.

Something new to try for breakfast: mashed banana mixed with 3 tbsp quick oats and 2 eggs. This batter is poured over a non-stick pan lined with slices of banana. This is cooked for 10 min on med high heat, covered, flipped than another 10 min.It was quite good. Eaten with maple syrup.

What an interesting recipe. I just bought bananas today so might just give this a try in the morning. It is left uncovered after the flip?

Baked sweet potatoes with coconut curry chickpeas and some lovely Harry's Berries from the local farmers market on the side.8FCF52DD-8A79-4792-AAF4-EF07B31139F8_1_201_a.thumb.jpeg.30540359404ce69d8e7ccbc64cd957f7.jpeg

I was was looking for a bean or chickpea recipe that used Thai curry paste but wasn't a super saucy curry.  Eat Your Books pointed me to this one from the dearly departed Fine Cooking magazine and it fit the bill.

No. Use a plate to help flip the "pancake", then cover and cook another 10 minutes. I checked about half way to see how brown it was.

Very crap photo of a good Egg McMuffin-ish breakfast.  Should have looked and taken another but I was hungry.

That is almost to pretty to eat.  What a lovely phot.   Frame worthy.

 

Baked this morning.  Longer skinny sourdough baguettes.

There’s a certain comfort in having similar breakfasts according to the season. Same Same but different. Grilled cheese over tomatoes on toast.

Breakfast wrap of eggs, sweet peppers, mushrooms, green onions, red Thai chili, cilantro, Thai basil, aged cheddar and lettuce in a WW tortilla.

Last summer's blackberries and apple with a glass of Clamato and coffee.

It’s Pancake Tuesday here already. Some call it Shrove Tuesday, anyway pancakes for breakfast with home made quince jam and some yoghurt.

I know liver isn't for everyone but with their flavorful spice marinade and bright squeeze of lime juice, these are pretty great!  Well...you know....if you're a liver lover!

Perhaps I should get over my aversion to liver - I just always remember my Mom making liver and onions for her and my Dad - we kids got hot dogs on those nights! My Dad liked any kind of meat cooked to death - I thought I hated steak until I had one in a restaurant! I do love paté so maybe time to put on my big girl panties and try chicken livers!
