I actually don't even know why i did this,  was just gonna make some cabbage rolls.  So I hollowed out the core to boil the head and sperate the leaves. But, Damn I have   this big whole why not stuff it

 

Had some wild rice and some giblet stuff,

Carnitas tacos. Needed to use up a bone-in pork butt but no time to run the smoker. So carnitas. White onion, garlic, orange juice, orange zest, pickled jalapenos, Mexican oregano, black pepper, and Coca-Cola.

Carnitas in progress made the house smell amazing. In the background, Mrs. C’s roasted acorn squash with brown sugar and warm spices. Both of our mothers used to make something similar.

LOL!

Actually, I told people there will be crabs. Lucky I didn't tell them I had planned softshell. Couldn't find softshell last minute, so everyone got crispy crab skin.

@OlyveOyl – your desserts are always gorgeous and delicious-sounding, but that pear/apple/cranberry galette looks absolutely stellar!

 

@C. sapidus – Mrs. C’s cabbage salad looks interesting – can you share the recipe?

 

@Ann_T – I agree with you 100% about lamb shanks.  I’ve always loved them.  When I was a kid, my mom used to get them for my stepdad and me.  They were nearly as cheap as the bones they sold for stock making (and possibly dog treating).  Not anymore, but SO worth the expense.  Yours look exceptional.  Momma’s were a bit tough as all she did was roast them at high heat.  And I’m very envious of you being able to buy the porchetta.  I’ve never seen that on offer here.  I’d love to try it.

 

My poor family.  THIS is what I set out as a “dinner buffet” Tuesday night 😂:

I basically dumped everything that needed to be eaten or go on the counter. 

 

Various sauces and dressings, 3 ribs, turkey, sauerkraut, shrimp dip, corn dip, tots, and onion rings:

I informed them that most of whatever was left over after dinner was most likely going to be tossed.  They didn’t seem too sorry for themselves.  I actually ended up with a pretty good meal:

One of the nice things about risotto, besides that it is nearly always a great dish, is that it is more or less a blank canvas which allows you to combine many different flavors. This risotto had asian influences with ginger, lemongrass, garlic, scallions, coconut milk, chicken broth, cilantro, peanuts and chicken breast.

Pickerel Piccata, Strawberry Spinach salad, and stir-fried leftover rice and mixed vegetables

A friend sent me a recipe for Cranberry Stuffing Meatballs. I used twice as much canned cranberries. It was better. Eaten with Pappardelle pasta with tomato basil sauce. Sister-in-law sent home a couple of slices of baked Butternut squash when I delivered some of the second batch of Char Siu I just pulled out of the Big Easy. I have to stop giving away the char siu or I won't have any for baos! 😁

After baffling the nurses with my food deliveries to the hospital with Vietnamese. Thai and Korean food, I decided to skip Italy until I got home, so last night was pizza night, chez château liuzhou.

 

Black truffle, parma ham and arugula / rocket pizza, my favourite pizza from from my favourite pizza place.

自贡 (zì gòng) Zigong is a city in southern Sichuan It has been a major salt producing area for around 2,000 years and is well known as such throughout China. It is also known for having some of Sichuan's spiciest food.

 

Dinner tonight was 自贡盐煎肉 (zì gòng yán jiān ròu), Zigong Salt Fried Pork. It is lean pork slices marinated with onion and fresh green chillies, then pan fried with dried red chilies, rice wine, fermented black beans, doubanjiang bean paste, and sesame seeds, then finished with red chilli oil. Seved with rice. ¥38.50 - $5.39 USD.

Whipped up some fried noodles with pork belly and threw in (or on ?) some Gyoza for good measure. Enjoyed with a Yamazaki highball …

Working on the non-paella style Spanish rice, to be more like some of the rice we had in Spain.  Here, with mushrooms, decent attempt.

 

Round bone shoulder lamb chop, pan cooked, with some sliced off for Significant Eater's plate. Pan jus.  Roasted Brussels sprouts.
