Second attempt at a frittata

spinach/mushroom/leftover corn/potato filling - bit of aged white cheddar and crushed crunchy leftover taco shells.  Great platform for dumping leftovers into; evidently

Stir fried cauliflower and tofu curry from the Myers-Chang cookbook (Asian fusion restaurant in Boston). The curry sauce was quite good and made from red Thai curry paste, Madras curry powder, light brown sugar, lime juice.

Roasted squashes with hazelnuts, sage, garlic, butter.

Lettuce salad with apples and lemon verbena vinaigrette (thanks @heidih for the idea).

For some reason I've been craving some sort of savory pie.

Then I ran across this recipe.  I made it yesterday and it was amazingly good.

Black eyed peas, pumpkin, chard, celery, carrots, dill and spices. Slightly sweet-sour. Couscous and yogurt.

@Kim Shook: I'll take your raw onions! But hope they've been soaking in ice water for a bit 😋

 

Made Chicken Wellington for supper. Next time, I'll even out the thickness  of the breast for easier wrapping an d more even cooking. Interesting with the Duxelle on top of cream cheese Dijon mustard mixture.

@lindagThat recipe does look good.  What did you use for the roll dough?

 

@Ann_TReally glad to hear that you're doing so well.  I've now put cabbage rolls on the meal list because yours look so good.  

 

@CantCookStillTryThat is some perfectly roasted chicken you did there.  

 

Pizza night.  Sausage, mushroom and jalapeño pepper.  Dough started looking like a heart shape so I just went with it lol.

I marinated a small pork roast for a couple of days in doctored up enchilada sauce (added a lot of fresh cilantro, cumin, garlic, onions, homemade chicken broth, chili powder)then I pressure cooked it in the IP for about an hour.  Quick release.  Cooled a bit and removed the fall apart tender meat.

 Turned the pot to sauté and added a slurry of cornstarch and water to thicken the sauce up a bit.

Added peppers and onions to the filling.  Super good enchiladas and I have a couple bags of sauce in the freezer for the future,

Big day today: little one got his first ever half year report in school (he‘s doing fine) and his first CoVid vaccination shot (he‘s doing fine, too). So he got to choose a movie (on a friday !) and dinner - he wanted hot dogs and fries …

Hot dog with spicy beef sausage, teriyaki mayo, pineapple, roasted & fresh onions and some greens on a brioche bun. A beer. Rest of the family got the beer-less menu.

 

Served together with „Back to the outback“. Happy kid 🤗

but ' sappy '   : i.e. the skin is browned and very maillardy , ' tight ' and has a very 

 

definitive snap to it as you bite in.

Air fryer dinner pretty much. I nuked the sweet potatoes for about 4 minutes, partially air fried/roasted the beets earlier in the day, then threw everything in the air fryer for about 20 minutes total. The pork tenderloin looks more rare in the photo than it was in real life, pink in the middle but not raw as the picture suggests.

Greek chickpea stew with orange peels and juice, fenugreek, oregano, turmeric, coriander seed, anise seed, tahini.

Warm crisp bread.

Dakos (rusks) salad with roasted peppers, fresh vegetables, blue cheese, soft feta, capers, oregano, garlic, olive oil, vinegar.

Ouzo.

I'd say that pork looks just right. About 134F...far from raw!

Storm food. Snow then freezing rain/ice. 

Meatball success last night. With Vodka Sauce. 

Thursday night burgers. On Martin's diner rolls so more like sliders.
