It had enough sodium?

Ha. Dad with CHF is on  low salt. His wife didn't salt the potatoes or green beans for him, but gave him a piece of Costco rotisserie chicken. She put out a salt shaker by his place setting, I removed and told her that chicken had plenty of salt for all 3 items.

Thanks to @shains adventures in Greece and @JoNorvelleWalkers recent post, I felt the urge to make Moussaka today. @weinoo will be pleased to know that this low-carb variety (I omitted the potatoes) is completely in line with the Duvel diet. Family was happy as well …

Those plates look to be a similar glaze as one of my favorite platters

@Wait. Wot, I love both yours and @Duvel's serving plates.   Even Moe commented on them both today.

I knew that I wouldn't be hungry for dinner after eating the Black Pepper steak stir fry for lunch.
And I also knew that Moe wouldn't want a big dinner so when I got home from work I pulled a dozen spot prawns out of the freezer and quickly thawed under running water.
Brought a pot of salted water with lemon to boil. Added the prawns and immediately removed from the heat. One minute later removed the prawns and plunged into a bowl of ice water.

Made Moe a simple Prawn Cocktail.
Love having a freezer well stocked with seafood from Walcan Seafood.

And I have a very happy husband.

Salad with banh mi flavors.  I pickled a kohlrabi instead of a daikon radish along with the carrots just to see if it would work.  Everyone ate it so I am calling it a success.  One kohlrabi down, four more to go, with another one coming in tomorrow's CSA box!  We still have two more heads of lettuce and two bunches of kale to get through from last Friday's box, though I did not see either in the list of what is coming tomorrow, so the need to use them is not as urgent as it would have been.

Very interesting. I really hate having pickled daikon in my refrigerator because even in glass it just stinks. I am assuming this would not be an issue with the kholrabi. Similar taste and texture I would guess.

Pickled / sweet&sour Kohlrabi is very popular in Germany (it has to be, because we have so much of that stuff). For me, that’s the only way I can stand that vegetable - mild & crunchy. If you come with the other German preparation - boiled & served in cream sauce - I‘ll run …

A couple of dinners.  Burger, cooked on the PAG, served with steamed cauliflower in butter.

Pork chop, plain, cooked on the PAG, served with roasted Brussel's sprouts and carrots, cooked in the BSOA on air-fry.  They look pretty charred but they were good.

For dinner on Tuesday we just did cheese, bread, and tomato soup.  The soup was Campbell’s:

Pretty ordinary, but the cheeses and the bread were special.  The bread was Billy bread:

IMG_6515.jpg.26390e67499bd13fa4faaccfc3542ecb.jpg

One of our favorites.  We are so lucky that it is made in Richmond.  The cheeses were (mostly) ones we got at Truckle Cheesemongers at Blue Bee Cidery when our friends were here over the fourth:

IMG_6513.thumb.jpg.b01b4d4e620b5304a8cd0008f0da2d2a.jpg

At the top is a tub of herb/garlic spreadable cheese, then from 11pm clockwise: ? (I have messaged the cheese shop to ask), Gruyere, taleggio, and Appalachian.

Served with these:

Last night we had a couple over to celebrate one of their upcoming birthdays.  She requested a Low Country Boil.  We started with the same salad that my MIL made for my birthday dinner – Spinach and Fresh Fruit salad:

IMG_6520.jpg.d76ca2242bd3c508a32c8be28ad11355.jpg

Went to the Wednesday farmer’s market and got some gorgeous strawberries and blueberries.

I did a mash up of a couple of different recipes for the Boil.  A couple of us cannot tolerate much spice, so I went more towards an Old Bay based recipe than a Crab Boil or Cajun Seasoning based recipe.  I compared recipes and ended up adding oregano, chives, bay leaves, lemon, and peppercorns to Old Bay.  There was Old Bay hot sauce on the table for the others, but the heat level was fine for the two of us and overall the flavor was strong enough for everyone.  The amount of food was WAY off, though.  One of the recipes called for 4 pounds EACH of shrimp and crab legs – to serve 6-8 people!!!  I just used shrimp, but we still had two gallon-bags of leftovers!  It was really good, though.  We just sat and talked and laughed and peeled shrimp and drizzled olive oil and butter on everything. I’ve sure missed these occasions.  And I hope they are back for good.  Building the Boil – potatoes:

Kielbasa:

IMG_6519.thumb.jpg.bbbde2d60b3b201b17c68b10c426e2a1.jpg

Sweet white corn:

Wild-caught Key West shrimp:

Low Country Boil:

I see now that I should have drizzled it with some olive oil as it looks a little dry.  There was EVOO and lemon butter sauce on the table.  Served with Billy bread (a local favorite) and a baguette from TJ’s:

Red sauce with Italian style chicken sausage with, from 12 o'clock: last year's canned tomato sauce, baby bella mushrooms, this year's garlic and our own blush and yellow onions.

No hot pepper, usually a must, as 11 year old granddaughter doesn't do hot spice.

Served over roasted zucchini noodles with parmesan and hot sauce on the side.

I thought so.  My sister said it tasted like dirt, but she is just anti-kohlrabi in general.  My niece and I liked it.

Last night, my nephew requested mutter paneer.  He is moving west for a year in a couple of weeks, so I am letting him pick most of the dinners until he leaves.

My niece hates tomatoes, peas AND paneer (Why?  I have no idea.) so I made her a seared cabbage coconut thoran.  The original recipe called for tomatoes mixed in with the coconut but I subbed in roasted red peppers for her.  She ate the entire plate so it must have been tasty.

Last night's dinner.  Pulled more prawns out of the freezer and made Spaghetti with Grilled Prawns.
Matt harvested basil from our garden and made pesto so I used a little of it in a simple pasta sauce.
Just sautéed cherry tomatoes, fresh local garlic, olives and just a little of the pesto sauce.

Too hot. Far too humid...

Kong-guksu. Korean noodles in cold soy and sesame soup.

I made a quick soy milk - trusting the blender to get things smooth enough without passing it through a fine sieve. Kept some beans for serving.

Noodles were toasted before boiling.

Omelette ribbons. Toasted pumpkin seeds and sesame, chili.

Some ice cubes to keep it nice and cold.

Skipped the usual cucumber topping, instead made a quick zucchini salad with sesame oil, vinegar, fish sauce, chili and garlic.

Also homemade kimchi with a drizzle of tahini.

I love @Kim Shook's posts always!

@btbyrdI had forgotten about that new pasta shape.  I remember having the window open for days when I was trying to decide whether to buy some.  I am a pasta freak, but I didn't order.  Wish I would have now because yours looks so good.

@Ann_TThat shrimp looks like it just jumped out of the water and into the cocktail.  I'd love some of that right now.

I've been terrible about planning dinner lately.  UGH.  My appetite hasn't been great for some reason so that's a lot of the reason....or maybe I'm just so sick of my own cooking lol.

Found a smallish pork butt in the freezer so I threw it in the pressure cooker with the usual suspects to make pork enchiladas with.  Have a lot leftover that went back into the freezer for an easy meal.  Also made a double batch of enchilada sauce so that's frozen too.

My go-to when I have nothing thawed out:  Wings.

thumbnail_IMG_1040-1.jpg.7b82814ebec9c8088b56c0149ebaa62c.jpg

Hot wings, the first okra, squash etc. from the garden.

Salad and venison cheeseburger pizza.

Yesterday, although still hot was thundery and raining all day.  The only thing that sounded good was lamb stew.  So that's what happened.

For someone who isn't inspired to cook - you do a wonderful job! I tried a new recipe for bone-in, skin-on chicken breast last night and that is about as inspired as I have been for two weeks. Fortunately for me, my husband doesn't have a big appetite when it's hot, so we are both content with salads and sandwiches type meals. Reubens tonight.

I need to be like you and try new recipes.  I'm just so blah that the same old things are easier.
