Thank you......🤯 sorry...I'm having chemotherapy at the moment and the syndrome is called "chemo brain"...makes one do stuff like miss-read an ingredient....thank god, 'picked pork hock' is much easier to source than 'pickled pork hock'. 🤪

I will use my BBQ pig.

cheers

Tinga tacos  topped with the usual suspects and Herdez guac sc.  If you don't know this  condiment you should give it a whirl.  It's complex, spicy and crazy good on anything esp for being a commercial product. Ole!

Ronnie has been almost perfect about staying home and away from people.  He's much more of a "goer" than I am.  He's in the high risk category so I've been the one going in to get groceries, prescriptions etc.  I've been out much more during this pandemic than I was before sigh.  Always being safe, not touching face or hair, wearing a mask and I bring a few precious Clorox wipes with me in a ziplock.  Anyway, it was a beautiful day yesterday and Ronnie really wanted to go fishing at a lake about an hour from here.  We decided I'd stay home with the dogs and he would go unless when he got there the lake was packed with people.  Only 4 boats on the whole lake!  So, he got to be out for a few hours and brought some crappie and white bass home without being around a single soul :) .

So asparagus salad, fish and mac and cheese last night

Aww thanks!  Crushed cornflakes.  I've been out of panko forever, but I seem to have a neverending supply of cornflakes lol.  Dip in flour, then egg/milk then crushed cornflakes.

I so so envy your fresh fish. A clerk at the local Ralphs (Kroger) is a fisherman and sometimes brings catch to customers. Not for money - just a good guy. I am kinda low on his totem pole as opposed to longer time customers  but I  love him.

Can you provide a recipe or anything special about this egg salad.. it looks really good..  I just came back from a run and would eat the entire Challah and egg salad if I could. there are not many challahs that look appetizing to me... Do you have a source for this too!

@Shelby – don’t know how I forgot about using cornflakes as a crunchy coating.  I oughta lose my GRITS card! Jess made that potato casserole with the cornflakes topping and bought the largest economy size box, and I am tired of eating bowls of cornflakes as my midnight snack!  Thanks!  I’m glad that Ronnie got some fishing in.  Does this mean he’s not going to be available for Banana Identification anymore?

@shain – your challah is gorgeous!  And what makes your egg salad Japanese-style?  I loved that meal.  It would make a lovely Mother’s Day brunch!

For dinner last night we were craving fried chicken or Chinese.  Our favorite Chinese won out.

Fried noodles and wonton soup, egg roll, and crab Rangoon:

My crispy honey shrimp on rice and a little of Mike’s orange beef:

This is what’s left after Mike and I ate 3 fortune cookies:

Thanks! The egg salad is super basic - don't over boil the eggs, mash the yolks with Japanese mayo until smooth and fluffy (regular mayo will still be good), add a little rice/cider vinegar (to taste), salt, pepper, maybe a little chili. Then mix in the chopped whites.

I'll try to remember and post the challah recpie later.

Thanks! The egg salad is made Japanese by using Japanese mayo :P Best used for making Japanese egg salad sandwich with some fluffy white bread.

i think the over proofing,  gives your challah,  "shiksapeal." It's like a challah pretzel or something..  Meanwhile, if anyone starts making challah pretzel, let me know. !  That egg salad looked like a wonderful combo.  or whitefish.
