Last night's dinner.

Found a recipe for a garlic, lemon pasta dish using crab.
I have lobster tails in the freezer so I pulled out one that weighed 7oz and I adapted the recipe reducing it for two
and subbed in lobster. Served with a lovely Chardonnay from our local Unsworth Winery.

Years ago, many many years ago when we lived in Toronto, we use to go to this little Armenian restaurant on Queen Street called Arax
and the owner was a man named Raffi, an Armenian by way of Lebanon.
We always started with his amazing deep fried eggplant.
Thinly sliced, with a thin batter, it was so good. Sometimes we ordered two orders to share.

Tonight I made deep fried eggplant with a very light and crispy tempura style batter.
I served with it Toum a Lebanese Garlic sauce that I sometimes serve with Chicken Souvlaki. Reminded me of Raffi's eggplant.
I need to make this more often.

I'm really far behind posting--not that anyone is dying to see what I eat every night 🤣.  My MacBook is SO old and I'm having keyboard problems along with other stuff.  I have a brand new one sitting beside me.  In it's box.  I'm not looking forward to setting up a new one after all of these years.  UGH.  Anyway, on to the food:

Ronnie came home with another cheap rotiss. chicken so I was looking for something new and exciting to do lol.  Came across buffalo chicken "pizza".  Base of blue cheese dressing.  Topped with chicken mixed with melted butter and Frank's Hot Wing Sauce, crumbled blue cheese, mozz. cheese and green onions.  I told Ronnie not to think of it as pizza.....he seemed to like it.  I bet he doesn't ask for it again though lol.

Corned a couple of goose breasts.  Did those yesterday SV at 179F for 6 hours.  Made for a really good reuben.

Another galette --blueberry and raspberry.  I know I make these a lot but we enjoy them and it's the perfect size for two of us.

That  dish is absolutely perfect for a lasagna for the two of us.  It used to be my Grammy's.  A search of the W logo tells me it's a McKee GLASBAKE 1940's+ Westinghouse clear lidded oven-refrigerator dish.  There are several listed on EBAY.  I don't know if I have ever had,  or seen the lid.

 

It's 3 1/2 inches deep and 8 inches long.

Ive been thinking for a long time making lasagna in the glass pyrex pans I have

 

circa '70.  made by corning , the real thing.   then thought about my mothers

 

glass bak9ing pans , which I had forgotten were larger and had lids

 

the same as the above .  I have two w lids.  the lids are different than one of the pics

 

in e-bay ( rounded )  .  the lids for these are square , and box like.

 

pic soon !

 

I already have the turkey ragu , in bricks.  Ill use cottage cheese w mix-ins  ( basil , parmesan-ish , yolk )

 

Ill even make a pot of the Hazan tomato sauce , finding a can of the real S.M tomatoes , organic

 

hopefully w no added salt   to start with.

 

hopefully before it gets hot and humid.

 

these glass pans I know predate WWII.

I do a cottage cheese layer just like you described.  Ronnie doesn't care for ricotta cheese so that method works nicely.

 

When you already have the sauce etc.  made like you do, putting a lasagna together is much less daunting.

A local gringo-oriented market (though the weekend city folks from Guadalajara shop there in droves) has new shelf space for Patak's brand Indian sauces, etc.  

 

I prepared the curry sauce per directions (add sauteed onion and tomatoes though I used a local tomato puree).  Dropped a cut-up rotis chicken in it and let it sit in the heated sauce while I prepped the side of caramelized brussel sprouts using my pantry of dry Indian spices. 

 

Lime pickle of the same Patak's brand and some yogurt on the side.  

 

Both us us very impressed with the flavors.  Not sure if available in US but will look for it next trip north.

look foe the paste over the simmer .

 

add water to the paste , you git simmer

WAIT! Waaaiiitt.... 

I know what it looks like 😬.  But please take it from me (or google, or tiktok, I wouldn't believe this either) - this is a Modern Northern English delicacy. 

It's a Jacket potato (that's a whole skin on tayto roasted so long it can take its armoured self to war) topped with butter, cheese and a Chinese Chicken Chippy Curry (The curry has never been to China but you buy it in Fish and Chip shops and / or Chinese takeaways - often the same place).

Despite still getting very hot days, there is a cooling in the air particularly in the mornings and I will be glad to get back to roasts, soups and stews.
 
Another salad for dinner. There are sausages cooked on the BBQ under all the salady things.

NOT salad for dinner !!… we had a small steak, sautéed potatoes in olive oil and sautéed in butter zucchini, with hubby’s rib sticker gravy… all good
