black-eyed peas over rice; diced green pepper&cucumber

Here are some dinners we’ve been having over the past few days. 

Below spaghetti bolognaise

We had dinner one night at our son’s and his wife made this enchilada, she said it was a Jamie Oliver recipe with sweet potato and black beans in the filling. It has made me want to make my own enchiladas and I’ve been looking up recipes.

Below an ordinary chicken schnitzel and 5 veg meal. The mashed sweet potato with butter was nice

A retro recipe that will be recognized by anyone who has lived in Quebec or have French Canadian roots.

Pate Chinois.

I added to the rather bland standard recipe by using a beef/pork/mushroom/onion base with a good gravy and topped it with roasted garlic, aged cheddar and chive mash.

Served with a green salad.

Not a lot if you don't use lamb, use corn and regard the traditional/nostalgic value.

Tried a pasta dish from Gordon Ramsey. I looked for something to do with a leek, mixed mushrooms and some tarragon. Found a pasta recipe, used up a bag of pappardelle. Pretty tasty with the tarragon.

Oven-fried cod (coating made with crushed melba toast, egg whites, mustard, thyme, cayenne, garlic powder) with seared cauliflower with panko crumbs and garlic and mashed potatoes with pureed dried tomatoes, olive oil, basil and parsley

Two recent dinners.  Wings in the Speedi with broccoli.

Having missed out on eating a sausage roll on my recent visit to London, I ordered some frozen sausage rolls and assorted bangers and chipolatas from Jolly Posh Foods.  Made the sausage rolls.  They were just OK, not bad but not great.

IMO if your sausage rolls end up just ok, you are doing well

It's almost never bad to feed someone.

Fresh Halibut done on a grill pan and finished in the oven. Served with rice and a Greek salsa.

I have been craving halibut for a couple of weeks now. My "local" fishmonger didn't have any. I finally found some at Whole Foods and cooked it up. It was great!  I was at Trader Joe today and was hoping they might have some frozen packages but I struck out. I guess I'll have to order some from Rogers Fish Co.

A few meals during this crazy spring - winter weather!
Made a big pot of Beef Stew. Delivered 4 meals for 2 to a friend whose wife just passed. She was a talented friend who made a lot of pottery and jewelry. I will miss her very much.

My brother had given us a couple of bags of King Crab claws. I haven't bought any lately as the price is outrageous. The claws are cooked, so he said to use them for salad as he found them spongy after steaming. I tried the oven method: thaw, brush with melted butter, and roasted for about 15 minutes in 375 oven, just to warm thru'. They were fine, but a lot of work for so little. LOL! I had some Snow Claw clusters and I enjoyed them more. I'll wait now until we can get to the source for fresh!

Had picked up a couple of uncut chunks of beef liver a while back on sale at Safeway. Thawed, sliced, breaded and pan-fried with onions. Lovely with green peppercorn gravy
