Fried egg, baby Swiss cheese and a fried zucchini round. This was one of those squash that hides in the garden until it's just too big to miss. I fried up 2 slices, one to put in this sandwich and one to have by itself. I have to admit I was a bit skeptical about it, but it was pretty darn good!

Fried tomato, egg, left over chicken tenders from Chck-fil-A.  Chicken was reheated in CSO and tasted better than the first time.

Breakfast was Eggo froz waffles with syrup topped with easy over fried eggs along with breakfast sausages (that sadly had been in the freezer a touch too long - had that off-taste that develops over time.)

Warm salad of chickpeas and charred zucchini in in yogurt and tahini sauce, with mint, parsley, garlic, cumin and some dill.

I never liked a BLT sandwich when I was a kid.  I think I could take each element separately, but for some reason I didn't like mayo, tomato and lettuce on the same sandwich.  But with many foods I refused as a kid, my palate has either paled or is more enhanced with age.  In any case, now I make a BLT for breakfast about once a week.

That is a mighty fine looking BLT.  I love BLT’s.  The proportions of each letter seem just right.

Thanks.  I slice the tomato really thin and I've found a good 12-grain bread that I prefer.  Any bacon will do, but I have a brand that does Applewood smoked so that's my preference on this sandwich.

This one had 3 slices and I used butter lettuce and roma tomatoes.  I break the bacon slices in half to fit them into the sandwich.  I used bottled mayonnaise but if I have homemade on hand it's far better.

Interesting. My comment was going to be that whole grain is too buusy to allow thr best tomato to shine.  But - free choice and no judgement are good things ;)

Breakfast this morning was a freezer gift:

I discovered some of my MIL's hot cross buns in there and paired it with sage sausage.  They freeze so well.  Still have a couple left in there.

My wife was gifted a loaf of sweet Greek bread by one of her patients.  Burns too easily to make toast but made a dandy French toast this morning

Usually, when it is hot and humid, I don't want much for breakfast, but because we decided to skip dinner last night, this morning was an exception. Poached eggs on a toasted snowflake roll, scrapple, home fries with onions and roasted peppers.
