Matzo casserole with leeks and scallions, kashkaval cheese, sirene cheese.

Pan fried salmon with crisp skin, oranges, a touch of dill (weird plating, haha).

tonights dinner: lamb, potatoe mash with wild garlic, fava beans with chorizo, fermented green pepper. a glass of red wine to go with, made it perfect for me.

Stuffed eggplant, tadka dal, spinach paneer, rice, atta dosa, fresh tomato chutney and lime pickle.

These dosai are different, in that the batter is made with atta flour and rice flour, plus chopped curry leaves and green chillies. There's no soaking, grinding or fermenting, so they're very quick to make (and quite yummy).

Nice meals everyone!

Tonight we are having the last package of homemade Italian Sausages cooked with water on the stovetop then browned when the water has gone.  Homemade pasta with a tomato sauce and steamed broccoli. There will not be a picture because we are watching our beloved Edmonton Oilers play their third playoff game since 2006!  Sheesh.  What is the world coming to.

 

Last night's dinner posted in the steak thread was really nice.  What I liked the best were the onions.  I thinly sliced yellow onions, tossed with salt, pepper and flour and fried with oil in a frying pan until they were pretty well cooked and light brown.  I turned them onto parchment paper on a sheet pan and put in a 400F convection oven for about 10 minutes.  They were a little over but man were they crisp and an excellent 'fried onion' flavour.  I will be doing that again.  Maybe I'll play around with cooking them completely in the oven.

All the traditional Easter stuff, plus mac and cheese, because I have carb-loading kids who require mac and cheese.

And the best thing about Easter, because everyone needs a gratuitous cute kid pic, is dressing one's grandson in seersucker and a tiny little tie. Because, you know, "every girl's crazy 'bout a sharp dressed man..."

Hamburger, my nemesis.

 

For once I won.  Fresh, choice chuck, 0.58 pounds, partially frozen, sliced thin and ground in my Kitchenaid.  Pan seared to medium rare -- luck, not skill -- served with ken cut cabbage in a lemon mayonnaise vinaigrette.  Tomatoes.  French fries.  No lack of Zinfandel.

 

The patty retained its perfect shape.

 

My undoing was I could not find the wrench to disassemble the Kitchenaid grinder attachment.  Somewhile ago I rearranged my storage to banish the less used implements to the living room.  After reading about Paula Wolfert and dementia over dinner, I went around with a flashlight searching for the errant wrench.  I searched the bedroom, the living room, and eventually found it in the kitchen.
