Yes, pretty much. Enriched dough: bulk ferment, stretch out and add tomato sauce, toppings (sweet ham and bacon), grated cheese and some mayo. Roll up, oil lightly the roll and slice into 2" slices. Prove again to make them more fluffy. You'll need to condense the tomato sauce a bit to keep it from leaching out during the second rise. Bake at 180 oC for 25 min ...

Sunday dinner, sans meat, courtesy of the farmers market, except for the corn. Still 2-3 weeks away from local corn, so this, at least semi-fresh, came from Kroger. Yellow squash and onion sautéed in butter and olive oil, local tomato, zucchini fritters.

@MaryIsobel – I literally gasped out loud at the end of your dinner party story!  How disappointing!  Glad you had something to recover with!  And bravo on the rib recovery!

 

The other night I was alone and dug some leftover Alfredo sauce out of the freezer.  It was SO  blah:

The sauce was just some purchased stuff and I made myself an iceberg lettuce salad to go with it.  Mr. Kim and Jessica were out for a Yelp cider tasting function and stopped at a new taqueria – Lalo’s Pinches Tacos.  We’d been meaning to go to the food truck for months when it was parked near us and then it disappeared, and we just discovered that they’d opened a brick and mortar nearby.  My family rescued me from culinary boredom by bringing home some wonderful leftovers – a birria taco, a chorizo one, chips, and maybe the best guacamole I’ve ever tasted.  I can’t wait to go back and have it all hot and fresh! 

 

On Thursday Jessica and I did a day trip up to northern VA to do a few things we’d missed when we ran out of time on her birthday celebration trip a few weeks back.  This trip was truncated for other reasons – the awful air quality due to the fires that the Canadians are having to endure.  We mostly stayed inside or masked.  We stopped at our favorite H Mart – the one on Fairfax Boulevard with the food court.  Some of the places:

These were very good when we tasted them in the food court.  But when I got home, I steam-baked the remaining buns in the CSO and they were amazing.  I'll be buying more of them next time.

A mango/yogurt drink with popping boba.  I’m not a fan of boba, but the drink was fantastic – it had an orangesicle vibe to it.

Every single thing that we had was delicious.  Looking forward to our next trip up already!

 

 

Last night I redid the recipe for @Shelby’s seafood enchiladas.  When I first tried these, they didn’t work for me at all.  Much too gloppy – and the recipe made 6 extra enchiladas.  No idea what I did wrong.  I put the extras in the freezer and got them out to try again yesterday.  I made a half batch of the sauce and just lightly sauced them:

Jessica had no interest in trying them again, but Mr. Kim was willing.  I found them really good and thought the recipe was a keeper.  Mr. Kim said he liked them, but wouldn’t seek them out again.  He did think, however, that he might prefer them if I made them with all shrimp or shrimp and REAL crabmeat.  While I quite like surimi, he’s NEVER been a fan.  Served with Poppaw’s green beans (just canned beans heated and topped with bottled Italian dressing – it was the way my Italian great-grandfather made them and the only way I’d eat them for yours) and rice:

@Kim Shook Gorgeous fried chicken!  It is really convenient to do it that way.

 

@RaamoThose crepes look perfect.  I haven't had those in forever.

 

@weinooOh the oysters.  AND the percebes.  I'll never probably get to try those so I'll live vicariously through you.

Meatless Monday !

 

Just kidding: I had planned for a chicken curry, but my wife went rogue and made some chicken breast for lunch (unbelievable) and obviously this family doesn’t do the same protein twice per day (a rule I just learned today). Sooo … Palak Paneer 🤗

I made a big 9"x13" pan of Enchiladas Suiza (inspired by Sanborns).   It helped use up a pack of frozen white corn tortillas, a can of Media Crema, a jar of tomatillo salsa, dark meat chicken and some cheap white cheese.   A big dent in the pantry/supplies.  

 

I made it early in the afternoon and left it to cool while out.   When I got home, they were already being eaten.  Really good if I say so myself.

In a never-ending quest to use up all the (uncooked) proteins in my freezer, I found a lonesome Berkshire pork tenderloin, hiding out underneath some frozen bagels/bread. Not a big fan of the pork tenderloin, but it has a couple of things going for it; mainly, it cooks fucking fast. And it can be tasty if done just right.

 

I didn't even try to make these look uniform, or pound them thinly, as is often suggested, figuring leaving them a little thicker would actually work to my benefit. (I've not mentioned how much I love this smallish (3 qt.) Falk rondeau for cooking stuff like this, but...I do!).

So...pork piccata. Piccata "sauce" is white wine, chicken stock, lemon juice, butter, shallots, garlic, scallions, capers, lemon zest, parsley.

Then, as if to add insult to injury, plated comically...

Last week of the fish share delivery for the summer (it keeps going, but we stop getting it until the fall because we travel a lot in the summer), and it turned out to be one of my least favorite, pollock.  Sigh.  I made it into a stew with ginger and soy sauce, with baby bok choy, shiitake mushrooms and some big oyster mushrooms I picked up my my town's farmers' market on Sunday.

I finally got this dish right :

this is my turkey ( iPot'd ) ragu, w TJ's dried egg noodles.

 

window green onions , and quite a bit of TJ's parmesan-ish cubed mixed in

 

I have no interest decanting the noodles , or any other pasta.

 

as Time Marches On .

 

so in the past I tried to gauge how much water to use in the saucier .

 

the idea it would evaporate while boiling.

 

what an idiot .   there was a little too much water this time .

 

'when the noodles were done ( and it takes more like 8 - 9 minutes boiling , rather than 6 - 7 )

 

I just used a pyrex glass measuring cup to scoop out a little boiling water.

 

1/4 cup ?

 

then added the re-heated ragu.

 

worked fine.    took me a long time to figure this out.

Love seeing all the corn even though most of us are getting it delivered from the south. We will not see local fresh picked the same morning from the field for a while but FreshDirect has a decent crop now. 

We had a Harbison week. From JasperHllfarms in Vermont. Our first wheel a couple weeks ago when. we had house guests. A cheese plate and other charcuterie a couple hours before dinner. Then slices of apple and pear with a good scotch an hour after dinner. Spinach/harbison omelets for breakfast.

A week ago Sunday we sliced open another. 9 ounces is a bit much for just the two of us. Really nice with bison burgers. Have had a bit every evening. 

Eater has a good cow-to-table how it is made...(if you like that sort of thing)

But Winnimere, similar to Harbison, that was proprietary for Eleven Madison Park until they went Vegan. Same spruce bark wrapped edge. 

On my next holiday gifting list.  Both our extended families love cheese.

Saag paneer to use up all the various greens I have been getting in my farm box. This one had mustard greens, radish greens, beet greens, turnip greens, and spinach.  Served with maharajah rice, naan, and a sampling of some chicken curry I picked up at my farmer's market for us to try (we all thought it was very good)

We've had a two day warm spell so a good opportunity to get some outside work done.

Simple dinner: salmon salad, tomato and lettuce sandwiches on croissants.
