Hot dogs are one the menu here for tonight. I only crave them about once a year and today is apparently the day. I only like "European weiners" so that is what I got. Probably baked beans and watermelon as sides. Sadly we will have to settle for storebought sauerkrout - I really should make a batch of my own.

Here is a pork chop with snap peas I had last Friday.  Didn't get a chance to post on Saturday because we got up early for a two day quickie vacation in Las Vegas.  Had two really good dinners there.  The first was at Wolfgang Puck's in the MGM Grand where I had a wonderfully prepared piece of salmon.  My wife wasn’t  feeling too hungry after a massive lunch (mine wasn't) so she just got a bowl of chicken soup but she said it was great with fresh, hand-cut fettucine.  Last night we both had some of the best filets ever at Michael Mina's StripSteak in the Mandalay Bay. No pics of either.

This is just the starter from dinner. The main course was something I've posted here a zillion times, so I'll spare you this time - it was good though.

The starter is hot-smoked sturgeon with Thai salted limes. Those bables are full of seeds - seedy limes. But tasty and worked well with the fish.

These pork chops (Red Wattle) came from Heritage Meats...

So I did not end up giving them the sous vide treatment, and last night it wasn't crazy hot, so I simply pan fried them...which isn't perfect due to the bone, but it worked...

A bit ambitious for a Monday night but prepped the salmon mix Sunday night and formed and rolled in crumb Monday morning to rest all day in the fridge. Extra credit--I've had some squash blossoms collecting in the fridge. I like this crumb. I made a big batch. Panko, cornmeal flour, lots of pepper, smoked paprika, urfa biber, (sp)--into the spice grinder for a quick zip. 

Smoked salmon croquettes,

Made one of my favorite meals homemade.......  Goi Cuon and Pho.     Death row meal.   I crave it when I am not feeling good.  When I am feeling good.  When it is cold and damp, when it is hot out.   Truly a top 10 death row meal for me.

What do you do for pho broth? Homemade?  Northern or Southern style?

This thing for dinner.  I was going to fill it with bacon, mushrooms and a couple eggs but had to use the snags instead with some fried onion gravy.

Simple, really low effort casserole - cut up potatoes, carrots and leeks, mix in dish. Pour mixture of cream, milk, thyme, nutmeg, salt and pepper over it and put in 395F oven for 45 minutes. (And if you are fancy you can add some chopped hazelnuts for the last 5 minutes to have some additional texture.)

In our home, Pho would definitely be one of our most-craved meals. Sadly it's hard to find here (Johannesburg, South Africa).

 

However, we have found some delightful Chinese Hot Pot at a few tiny places that we have developed a real love for, so it 'sort-of' scratches the itch.

Nice summer bbq with grilled chicken, pork ribs, beef ribs and homemade sausage.  The beef ribs were removed prior to cooking a standing rib roast at Easter, vacuum bagged and frozen.   Dinner was served with cajun potato salad, cucumber salad and a fresh peach crisp with Tillamook ice cream.    Everybody had seconds so I guess dinner was a success.  The dogs got leftover  bones  so they too were happy!

Very nice summer meal. Don't think you need to guess on delicious. Funny rib aside - we went with friends to a Fireman's fundraiser BBQ once and the main was grilled beef ribs. My friend went around to diners abbout to throw plates away and snagged bones for dogs back home  Very attractive woman who could charm the 'ants off anyone.

a very long time ago 

 

we went to  ChuckWagon restaurant 

 

near by .  a single operation I think , late '50's 

 

is was an all-you-can-eat  sort of place 

 

unique at that time

 

The food was top notch stuff .

 

they had prime ribs ( real Prime those days ) every day

 

then the second main dish varied : roast turkey , bake Ham etc.

 

they had huge partitioned plates , you pick one up , and when though the

 

service line and staff added what you wanted to the plate 

 

at the end was a carving station , for the two featured meats.

 

the plates had brands as decoration on them , and it was a Chuck Wagon theme.

 

it had table cloths .  My father always had Prime Rib , end cut(s)

 

and they took his plate back and returned w the bones in a foil lined bag,

 

frequently there were added bones in that bag, if requested 

 

Cats and a Heintz 57 dog ( Earthquake, a rescue ) had the time of their lives for a few days.

 

the restaurant  lasted quite a few years .  I wish I had gotten a plate or two

 

for Posterity .

 

I had Milk , and they brought the glass to the table ! , along with refills 

 

we went there for our birthdays.  I went for the Turkey 

 

my sister, the Baked Ham.

@rotuts – pretty much every Italian restaurant here offers baked spaghetti, but I’ve really been eating it all my life.  It’s what my mother always made with leftovers from a spaghetti dinner.  After dinner all the pasta was mixed with all the sauce (sometimes she had to make a little extra pasta) and put in a casserole.  Then either slices or shredded mozzarella was placed on top, and it was refrigerated.  Once it ‘set’, you could cut squares of it to reheat individual servings all week long.  Mr. Kim likes it with added sausage, meatballs, and pepperoni. 

 

@weinoo – that porkchop looks gorgeous! 

 

@scamhi – I have never had Shrimp in Lobster sauce before and I can’t imagine why, being a Chinese-American food aficionado.  Thanks for posting the link to the recipe – I actually read and enjoyed his “story”. 

 

@Shelby – I love how super-cheesy your cauliflower is!  What are your ratios?

 

@Owtahear – lovely shrimp rolls!!!

 

Dinner a couple of nights ago (last few nights have been completely unremarkable) was some of my vegetable soup from the freezer – with added angel hair pasta and Parmesan cheese:

Served with marinated cucumbers and some cheese pastry rolls from Trader Joe’s.  The rolls were just some kind of mild cheese wrapped up in puff pastry.  They were fine, but I’m thinking I could do better.  I seem to remember someone  (@blue_dolphin, maybe?) also being underwhelmed.
