what is Heritage Meat ?

GF lends itself to SV

more than Just Pan in my book

as its inherent tougher-ness  is neutralized.

then the pan sear from almost cold.

Good question!  There is a place I've ordered from called Heritage Foods. But I don't think this was from them.

Might've been from...https://www.freshdirect.com/pdp.jsp?productId=prag_bstk_shell_bnls&catId=mt_b_steaks_strip

Something odd happened today: after requesting more German food a few days ago, my in-laws hinted at the possibility that their need for meat products has been satisfied. At least that’s what I could get with my limited Catalan …

So, tonight we had some vegetarian fare, Indian too be precise.

Palak paneer …

Pumpkin tikka (with some chickpeas thrown in to up the protein content) …

Some sort of of leavened wheat-besan flatbread, brushed with salted garlic butter after griddling …

Something of a quick mix between a chili and bolognese with fresh pork sausage, diced tomatoes, garlic, onion, red wine and white beans. Served over rice and topped with some shredded fresh mozzarella mixed with basil and lemon zest.

Joyce Farms (!!) chicken cacciatore in the foreground. Farmer's market broccoli raab in the rear, blanched and sautéed in a fair amount of olive oil and garlic and some chili flakes.

Took a little of the gravy and tossed some casarecce with it. Above: My plate of a drumstick, neck, wing, and a piece of back with the oyster.

Next time I come across a Joyce Farms poulet rouge fermier, I hope to be able to roast it (i.e. when the temperature drops to November normal).

I can't remember how old I was when I read The Lion, The Witch and The Wardrobe by C.S. Lewis --maybe 7?  Anyway, when I read about the Turkish Delight that the White Witch enticed Edmund with I thought "Sheesh, this stuff must be amazing!"  and I've wanted to try it ever since.  Zingerman's had some so I ordered:

thumbnail_IMG_3370.jpg.e6dc87895e869c6fbe4705280a0fd5d1.jpg

I liked it.  I thought it would be a bit more...pillowy? for lack of a better word but it's good.  Maybe not good enough to throw my family under the bus like Edmund did though.....

I was so intrigued by Turkish Delight as a child after reading that book. I too thought it would be pillowy, and it certainly had to be more delicious than any other candy I had ever dreamed of!  Then I finally got my hands on some and tried it.  I thought it was terrible!!!   Rose flavored jelly with pistachio nuggets in it?  What?  I could not believe that something so unappealing would make Edmund behave the way he did.  I've tried it a couple of times as an adult, and I still don't like it very much.

Last night, fish and chips, fries, onion strings, and cole slaw

Back to the German food portfolio, or - to quote Jimmy Carr - “Venison’s dear - isn’t it ?” …

Leg of venison stew with wild mushrooms, Spätzle, duchess potatoes (commercial product), red cabbage and pears with lingonberry jam.

Very good (if I might say so) and of course “no complaints” 🥳

Lamb curry with the shoulder, served with rice and yoghurt. Quite mild, but the flavour was good. The family all liked it. There's a bit of room to increase the heat. Quite pleased.

Does the venison have enough/any fat to really stew it for any length of time?

You are right: venison is quite lean. It has, however, sufficient connective tissue (shoulder/legs) to make it suitable for stewing. 90 min (to max. 2 h) does the trick; it produces a nicely soft result.

I think this might be Moe's favourite meal. Would be happy to eat it three times a week.

great looking fish and chips @Ann_T

I love battered fish done with really nice white varieties like halibut, had a great one done with trubot a while ago… must do it again soon

Tuesday night, fish and chips.  I would have loved Ann's thick and luscious-looking halibut.  This was flounder from my fish share.  I would not normally use flounder to make fish and chips, as I think it is too thin for frying, but my nephew is home this week and the only way he eats fish is fried, so fish and chips it was.

Love that the neck is included.  I hardly ever get necks included with my chickens these days, even from my local free-range farmer.

Last night pork roast with potatoes and carrots.  I made a really good gravy that I forgot to take a picture of.  I know I know, pictures or it didn't happen. 🙃
