Yes. Fish sauce - in Thai it is nam pla. In Vietnamese, nước mắm.

 

Unusual in Chinese cooking, but essential in SE Asia.

Fish oil is a medicinal food supplement; not an ingredient.

No particular story. One of a set of six. Japanese. Well used, as you can see. Only two left. But I have an irrational attachment to them.

My husband was a fine wood carver and to him, the feel and the balance of his tools meant everything. We have three sets of silverware and the only forks that he would use were two old forks that he had had for years. No amount of polish or elbow grease would ever make them look 'presentable' but they felt right in his hand and made his meal more enjoyable.

dinner last night for 4

freezer dive for a couple of good steaks

israeli salad to start

reverse seared the steaks and finished directly on the super hot charcoal (no rack)

green beans and shiitake mushrooms

and the wines both were great.

Our kitchen is a mess due to a water leak upstairs requiring the adjacent breakfast and family room ceilings to be removed, floorboards dried out then ceiling replaced, so we have been surviving on takeout for a few days.  But last night I cleared enough counter space to make pizza.  Crust, sauce, mozzarella, mushrooms, spinach and chicken Italian sausage:

yep, in Chinese, it's "鱼露", not rare in SE Chinese cooking. I have Omega 3 fish oil in my cabinet too, tho haven't thought about using it in cooking yet.

Oh don't waste the expensive fish oil - use canola which so many swear smells and tastes and smells fishy when heated :)

Two Ina Garten recipes past night: Penne alla Vecchia Betola and "outrageous garlic bread."  The bread was really tasty.  It had lemon zest on it which really perked up the flavor.

Yes, I'm aware that 鱼露 is used in Fujian province, especially in Chaoshan cuisine (潮汕菜), but not in the vast majority of Chinese cuisine. I live near the border with Vietnam, but we never see nước mắm here. I always bring some back when I visit.

 

One interesting exception is Shanghai, where the English introduced Worcestershire sauce, which is fish-based. It proved popular and remains so, to the extent that they make their own version locally - and very good it is, too.

@Shelby- It all looks good, but the braised fennel really caught my eye. What was your braising liquid? Looks delicious!

 

My first attempt at a take on cassoulet. I realize it’s not the most authentic, but it did turn out delicious! The recipe is from Bon Appetit. Confit Chicken with Andouille Sausage Cassoulet.
