Dinner tonight was a couple of pizzas from some friends of Jessica’s that do a once a month pop-up.  Homemade Italian sausage, red onions, and fresh mozz:

They were both delicious, but the crust was a little overworked, I think.  Kinda tough and not enough bubbles.

Fresh cod, fish and chips tonight. I wanted haddock, but it was not as fresh. The cod turned out to be great and the small cut fries were a winner as well.

All your meals look sooo appetizing!,

I have a terrible summer cold and have not managed to eat dinner for the past three nights.☹️ despite looking at this thread.

DH made pizza tonight and I have managed to keep a slice down.  Sorry, picture was taken which hopefully will appear in the next few days.

I finally got around to making these muffins yesterday thanks to @Ann_T who sent me the recipe.  The recipe made 24 standard muffins.  While good  the topping falls off and I have no idea how to stop that from happening.  I pressed the topping into the batter a bit more on the second pan but that resulted in the topping disappearing into the muffin.  I think they would be just fine without the topping.

That all looks so good. I have been craving a roast dinner for so long. The people around here are so fat phobic that it would be difficult to find a roast with any fat on it. That's so sad to me. Hope you get your appetite back soon. Oh and how do you make your stuffing balls. I want them.

I am feeling poorly.  Last night's can of soup was more than I could manage.  This afternoon went out to the pharmacy for some amoxicillin horse pills and stopped at Shoprite to see if I could find something I would want to eat.  I explored dark corners of the store that I seldom visit.  Nothing in frozen dinners appealed, nor any of the in-store prepared foods.

 

What I came home with was a jar of chicken gravy (I had never bought prepared gravy in my life), a jar of pasta sauce, and a bag of frozen ravioli that under the circumstance may be too ambitious.

 

Dinner is planned to be mashed potatoes and chicken gravy.  Don't expect a picture.

Thanks!  I spoke with the dentist this afternoon, hence the amoxicillin.  She said she would see me tomorrow.  I took a nap which exhausted me* but I'm actually a little hungry and hoping I can manage the mashed potatoes.

Today is our 17th Wedding Anniversary,  I've made these at least once in the past, and had some ideas to improve on them,  we zapped the eggplant since neither of us are fans and I cut the veg much smaller (the basis is from Sara Moulton cooks at home)  It takes a few hours but it was the best Ratatouille I've made!

 

Roasted Ratatouille Crepes with Goat Cheese:

 

As plated (we didn't pre-freeze the goat cheese, but we're not going for 100% presentation)

My wife's comment she put on facebook: "Even though I maintain that Nutella belongs on crepes and these had no Nutella, they were still amazing."

We celebrated Father's Day yesterday with my Dad.  He asked for pizza.  My Mom normally won't let him have it because he is diabetic, but I guess he adjusted his diet in the prior week to accommodate the carb explosion.  I made five kinds of pizza.  Three were his requests: sausage, pepperoni, and margarita.  No pictures of those.  I also did an eggplant parmesan pizza (sister's request)

Sautéed Chicken Breast with Tender-Crisp Vegetables

Serving Size: 2

Ingredients:

- 2 boneless chicken breast
- paprika, to taste
- salt, to taste
- fresh ground black pepper, to taste
- 1/4 cup all purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter (divided)
- 1/4 cup chicken broth, warm
- 1 clove garlic, minced
- 1 zucchini and/or yellow squash, chopped into 1-inch pieces
- 1/2 red bell pepper, chopped into 1-inch pieces
- 1/4 onion, chopped into 1-inch pieces
- 1 teaspoon fresh herbs (such as thyme , parsley or basil) chopped
- 1 tablespoon parmesan cheese, grated (optional)

Directions:

1. Pat the chicken dry and lightly pound between two sheets of plastic wrap to even out the thickness.

2. Season chicken with paprika, salt and pepper, to taste, and dredge in the flour. Shake off excess flour.

3. Heat oil in frying pan over medium heat.

4. Add half of the butter to the pan when the oil is hot.

5. When the butter has melted, sauté chicken until lightly browned, about 3 minutes per side.

6. Remove the chicken from the pan and keep warm.

7. Deglaze the pan with the broth and add the garlic, cook for a few seconds.

8. Add the vegetables and herbs to the pan and stir to coat.

9. Place the chicken on the vegetables, cover and simmer for about 5 minutes. Do not overcook, the vegetables should still be crisp, but tender.

10. Transfer chicken to plates.

11. Swirl in the remaining butter and gently stir the vegetables.

12. Transfer vegetables to plates and sprinkle cheese on top, if desired.

Update:  dinner was mashed potatoes, Bell's chicken gravy is not half bad.  Following my mai tai I was almost normal.  Whole 'nother meaning to "feeling no pain".  Made a mistake.  I pushed it.  In addition to the mashed potatoes I tried some little green peas.  So delicious.  Each pea a paroxysm of pain.

 

Waiting for the pills to take effect before I head to bed.
