Take out Friday

 

Dumpling soup (short soup).  Chicken satay, crispy squid, Belachan eggplant. This is all from favourite Malaysian restaurant.

A family favourite, "turkey slop". Normally, I wouldn't post such an ordinary meal but I decided to give the technique of microwaving mushrooms before frying a shot. A relatively challenging test since I started by browning the turkey mince then adding the microwaved mushrooms when the mince was partly cooked. Had to cook off some moisture but the shrooms browned up surprisingly well. Would work really well doing the mushrooms alone. Some onions, garlic, a load of paprika, and chopped parsley then sour cream at the end. Served over pasta.

 

The main problem was that the Aldi turkey mince is shockingly bad.

@Ann_T Beautiful halibut.

@haresfur Nothing wrong with posting ordinary meals. Here's one of mine.

Meatloaf (with incorporated sauteed mushrooms, onion, sweet and finger peppers, garlic and herbs and a panade of bread crumbs and milk) topped with habanero sauce, sweet potatoes and a mix of pickled cucumbers and red onions.

Enjoyed with a Big Spruce Brewing Cereal Killer Oatmeal Stout.

Yesterday I got dressed up and went grocery shopping. Then I came home, changed into my cooking clothes, and spent the rest of the day in my back yard because the weather was *perfect*. I got so much sun. Anyway, everything I cooked and prepped was done outdoors, and I did a lot of documenting. This was both an extravagant meal and a bulk prep session for future meals. We've now got protein and veg coming out of our ears.

 

The menu was b 40oz porterhouse seared over binchotan charcoal, cooked again over wood coals on my gas grill, and finished in a low oven. Also some yakitori chicken. Grilled asparagus, red onion, eggplant, and purple cauliflower came to the party along with some binchotan roasted fennel bulbs that I cut up, tossed with charred fronds, and dressed with blood orange and lemon juice, olive oil, and some cilantro/mint. There was a classic arugula salad with shaved parm, lemon juice, and olive oil. And a cilantro yogurt sauce I got from Jean-Georges.

 

It was stupid you guys.

Last night's dinner was Ham and Bean Soup made in the crockpot, along with some homemade bread.

Perfect meal for a chilly and wet spring evening.

Spatchcock Chicken: Chicken was seared, then brushed with a mixture of soy sauce, mustard, honey, tomato paste, sweet paprika, fresh ginger, salt. Laid the chicken breast side up on a layer of sliced oranges. The whole thing was wrapped in foil and roasted at 350F for 50 minutes. Remove foil and roast for another 20 minutes. The juices, mixture all mingled with the orange slices = delicious!

2 meals to celebrate the Irish!

 

Corned Beef & Cabbage, and Guinness Beef Stew. I found out the alcohol doesn't burn off in 2 hours with a lid on the casserole. I slept very well that night!

Still had 2 whole dressed pickerel in the freezer. Deep fried one and served with Sweet & Sour sauce and bell peppers.

Last night, it was deep fried tofu stuffed with ground pork, shrimp, shitaki mushrooms mix. Braised with oyster sauce and Romaine lettuce.

Felt like A & W tonight: Teen Burger Lettuce wrap, fries, and onion rings, no picture, but I did make dessert: Cherry Galette with cherries I froze from last summer.

My in-laws have arrived for a two week stay over Easter (yeaaaah 🙄). After the 13h drive the wanted something German, but “light”. Well, I had already mixed up a batch of Leberkäse, so …

Halibut with roasted carrots and mashed purple potatoes. I went to make a buerre blanc but I grabbed and opened a red wine so…. buerre rouge.

Meatball and sweet potato stew with peanut butter, tomato, Indian spices, whole pistachios, and . . . I don't really know what else Mrs. C used. Reminded me of the "peanut chop" recipe that followed Mom's side of the family home from their time in Ghana.

My CSA has started offering an add on box of products from a Turkish bakery/cafe run by the wife of the farmer.  She also has a high end restaurant but the products in the box are ones you can get at the cafe.  We decided to give it a try every other week for a while and had some of the contents with dinner last night.  From the box, there is a bulgur and broccoli salad with a spiced tomato sauce, fava hummus, and beet labne on the front of the plate.  I made the farro salad in the back and the flatbread (this is my plate so I had to take the first aka worst flatbread.  The others had nicer char).  We really liked all the dishes we got.  There were some sweet items included as well: chocolate baharat shortbreads, Turkish ravani cake, and a bottle of pomegranate rose sharbat meant to be diluted with water.

I think I may have semi-mastered seared scallops for dinner . . .

 

this are Costco - decent size

thawed/drained/re-drained/

patted dry immediately prior to the pan plop-in

stainless fry pan - veddy thin layer of olive oil - highish heat for an immediate sizzle.

 

caprese salad & steamed cauliflower for the rest . . .

They do look nice. If you want to go all the eay, you could potentially improve them with a 10 min quick cure with 2:1 salt:sugar to draw out more surface moisture and a sear with a high-heat stable fat, e.g. ghee

Manchamanteles (“tablecloth stainer”). Chicken thighs, sweet potato, apples, and raisins. Sauce was chile ancho and guajillo (toasted and soaked) sauteed onion and garlic, sliced almonds (toasted), crackers (crushed) and ground cloves, black peppercorns, and cinnamon, all blended in the Preethi and then fried. Simmered slowly and finished with Mexican oregano, cider vinegar and a little sugar.

We had just watched “Somebody Feed Phil” visit Oaxaca, I was craving mole, and this is one of the simpler ones to make.

Arroz Poblana with jasmine rice, onion, garlic, chicken stock, and roasted chile Poblano.


Young ladies visited again to work glass with Mrs. C, stayed for dinner, and provided lovely baked goods (coffee pound cake enjoyed but not pictured)

Beautiful fish, @Ann_T.  I need to clean the top of my stove but before I do you've inspired me to fry some up too.

 

Life is once again throwing things at me.  Long story short the bone loss that was occurring in my mouth did not benefit from the painful and expensive laser surgery that I got a few years ago and I'm now having to get another tooth pulled and another bone graft.  Eventually after it heals for many months I'll be having a post put in and then eventually a tooth.  I'm so upset and frustrated I can't even express it.  This week I gotta peruse old threads and write down ideas for foods I made back then and was able to eat.  So the next several days I'm gonna eat what I won't be able to eat for a while.

 

Arrrrgh!!!!!
