Dinners over the last 4 or 5 days.

Haddock with herbed butter over mushroom couscous and freezer gazpacho.

Montreal smoked meat on toasted baguette with tomatoes, coleslaw, pickled radishes and fermented green tomatoes.

Seared pepper tuna, which should have been plated better, with a tomato and avocado salad and Punjabi style samosas (green chutney on the side).

Kenji’s Chile Verde, Trader Joe’s Spanish rice and slaw. I had made the base from my Hatch Chiles and froze it, along with a pork butt, So it was a much faster process than from scratch. Tasty as usual.

Asiyah's eggplant curry, from 'Cradle of Flavor'. I have always wanted to make this for a friend named Asiyah, even though she is from a completely different part of the world. Anyway, lovely flavors from shallots, garlic, turmeric, sliced chiles, coriander seed, fennel seed, cumin seed, cinnamon, cayenne, and coconut milk. Jasmine rice to go with.

This is exactly what I am hoping to have for dinner tonight!  It will depend on what the fishmonger brings on his truck today.

 

A couple of recent dinners.  I have been cleaning out my Dad's house after his passing, which has led to me frantically cleaning out my own house as well.  I really hate clutter and mess in general.  While going through my pantry, I found a bag of anellini pasta that I did not remember buying.

 I decided to make a grown up version of spaghettios, with a spicy red sauce and finely minced kale.  My nephew had never had spaghettios before and was very unimpressed.  He described it as an unsatisfying cross between a stew and a soup, with a pasta shape that is not fun to eat.  OK then, guess I won't make this again 🤣

The next night, we had wonton soup with spiralized carrots and radishes, blue oyster mushrooms, chopped napa cabbage, and (store bought) chicken-ginger wontons

And last night, I made soup again, this time loaded mashed potato flavor to use up some leftover mashed potatoes in the fridge.

Friday night and felt like Chinese food. Made sweet and sour chicken, added mini spring rolls because we were hungry. Husband said the sweet and sour sauce tasted ’right’ so I guess the Chinese rice wine vinegar really helped with the flavour. Lots of red capsicum.

No problem,

 

A measure of milk in a pot with,

Bay leaf

Pepper corns

Onion

Garlic

Carrot

Celery

Nutmeg

Dijon.

Simmer very low for infusion. 

Strain milk, discard veg, lightly clean pot make a roux. equal parts butter and flour. add the milk add cheese's add tuna with some brine mix with very much al dente pasta, top with cheese, bread crumbs and dots of butter..  Oven or grill.

We find ourselves in Bergen, Norway. My dinner was turbot with trout caviar, wilted spinach, pine nuts, sun-dried tomatoes and a green sauce, possibly a very mild pesto.

The missus had fish and chips, which she rated 9.5

Truly outstanding. The battery was crisp, strongly seasoned, and the fish was very moist and tender.

We ate at the fish market on the harbour front:

Charlie asked for Country Fried Steak today. He always wants it with mashed potatoes, peas, rolls and peppered white gravy.  I forgot to get some rolls but had some I made a few days ago.  I thought my sister wasn't going to do the Thanksgiving rolls this year and was trying some different recipes and had some of those in the freezer. They are made with mashed potatoes.  She is making the rolls this year, I found out yesterday. The mashed potatoes and gravy came from envelops.  Just add water. At first I felt guilty about taking shortcuts but they save so much time and taste good.   Good enough for a quick Friday meal.

I didn't want to go too off-topic.

We were only here for a few hours. Wet and windy pre-Christmas Scandi weather.

The seafront's painted houses stretch back quite a long way with old rickety wood and brick structures. Now mainly shops, bars and hotels, I imagine in the past they would have been involved in various fishing service activities.

It has been raining every day this week and the forecast calls for another week of the same.

So I made a chicken stock based soup and homemade pork wontons to have in different variations.

Yesterday's was with some of the wontons, shrimp and bean thread noodles.

Ohhhh beautiful collards!  We didn't grow any this year and now I'm wishing we did.

This looks delicious.  Adding that to menu ideas for this week.  

 

You'd think that I fell off the trying not to eat many carbs wagon by what I'm about to post, but I've been trying I swear.  A lot of meals I haven't been taking pictures of because they are just too boring.  It's becoming harder, too, without all of the garden vegetables to choose from.

 

Roasted chicken, stewed tomatoes and scalloped potatoes.

Cabbage rolls--omitted the rice.  I should have used an additional egg or maybe tried some riced cauliflower in them....they were a little dry although the sauce was excellent.

SV'd lamb chops, "rice" pilaf and salad.  The pilaf was actually really good.  Ronnie said he liked it better than real rice.  Ok, maybe he was being nice lol
