Tonight's dinner.
I almost always grocery shop on my way to work. In fact I grocery shop almost every day. Something I have always done.
Wasn't sure what I wanted for dinner but decided while shopping that we would have a roast chicken dinner tonight.

Instead of buying a whole chicken I bought chicken breasts.
Had intended to roast two, but they were so big I went with just one.
 
Got the chicken seasoned and into the oven at about 5:40 and while it roasted put the potatoes on to cook, and snapped the stem end off fresh green beans.

Then since it was going to be a little while, I made us both Bloody Caesars. Between the celery, dill pickles, spicy dill green beans and the olives, Moe had a salad.
 
While the chicken rested, I mashed the potatoes and made the gravy.

I've never had Lundberg Jasmine rice, as I'm not a fan generally of Jasmine rice. But I always have Lundberg Basmati on hand. I pretty much use it if I don't want Japanese short grain /sushi rice or Italian Carnaroli. Their organic Basmati was awfully good, but I don't see that around anymore; the non-organic is just called "natural" or some such mystifying term.

I think the Lundberg rice is sticker than other brands, even after rinsing and soaking.  I will use it in a pinch, but it's definitely not my preferred brand.  I buy my rice in big sacks since we eat so much of it.  I stick it in my garage freezer for a while after buying it to freeze out any pantry moth eggs.  I use Nishiki brand for short and medium grain rice and Swad for basmati rice.

 

Last night, Ottolenghi's butternut squash lasagna pie and a kale salad with toasted almonds, dried cranberries, and Boursin cheese.

Everything looks so wonderful but what I want most is that Caesar!

I make mine with Absolut Peppar, outstanding!

After a busy Sunday (tax season in Germany) I felt too lazy to cook for the “starving” family. I felt too lazy to discuss ordering-in options. I felt too lazy to check the delivery apps. So I whipped together Spaghetti Carbonara* …

Ribollita without the bread. We prefer it without. This time I added some precooked orzo to the bowls, so that it wouldn’t suck up all the liquid (like the bread).

 And a really old bottle of Vampire Vineyards wine my cousin gave me. It was actually a lot better than I thought it would be.

Red beans and rice. A pound of RG Domingo Rojo beans, a pound-plus of Andouille sausage, about a cup of ground ham, about a cup of diced roast chicken thigh meat. Tomatoes, green chiles, onion, Cajun seasoning. Chicken broth, bay leaves. Made a vat of it. It was wonderful, if I do say so myself.

Since the surprise snowstorm a little over a week ago, the weather has been spectacular, so this Sunday found us firing up the smoker once again.  This time, we decided to channel our inner flintstone and smoke a tomahawk and added some surf as well.    I'll confess, this was my first time doing lobster (I've no idea why, other than its something I think about when going out for dinner rather than making at home).  Because this is only on the smoker for a couple of hours, then reverse seared on the grill, I used the super smoke function on the smoker to add some extra smoke to it.   Also made our favourite potato salad again

Another work and cooking session with the grandson. This is working out as he's been a big help cleaning up leaves, moving plant pots, etc.

We made wontons for lunch, with ramen noodles. I also tossed in some glutinous rice flour dumplings and julienne daikon. Dumplings were not a favourite for my hubby and grandson. They find the "globs of sticky chewy balls" hard to chew and swallow. LOL! I love them!

How was that squash lasagna?  I keep looking at that recipe and thinking "Could those things possibly taste good together?"

 

But I often think that about Ottolenghi recipes, and then am shocked by how delicious they turn out.

I'm reading the 2016 Dinner Thread now....apparently I got on a stuffed chicken breast kick when I got my SV set up.  I'd forgotten how much we liked this.  Fresh mozz, spinach and salami.

I see you have a deep dish for that 

 

do you recall where you got it.
 

deep lasagna pens , metal or glass  

 

( I like glass for the visuals ) )

 

ae not that easy to come by 

 

when they should be standard 

 

ir the depth has to be significant 

 

then you can make other sizes w that depth.
