same as several frames up stream 

 

this used the ' on the vine ' tomatoes I have from TJ;s

 

still a very good dish for me

 

but the tomatoes that were the Campari , and the ones in the picture several days ago

 

made this dish so much better .

 

the ones from MarketBasket , the reddest Campari Ive seen

 

will look for them Sunday AM

 

Id make this again , just as you see it

 

until I hopefully get those Campari's

Red Peppers stuffed with ground turkey, whole grain and wild rice blend, mushrooms, onions, garlic and spinach. I suppose I could have scraped the spaghetti squash from the shell, made a nest of it for the stuffed pepper and garnished it artfully. Obviously I didn't do that.

Eggplant and red bell pepper stir fry with fish sauce and lime.  Spicy chiles, peanuts, and cilantro on top.  Brown coconut rice

Cold enough still for lamb stew.  I need to source some more lamb meat.  Grocery stores around here only seem to have ground lamb and I want stew meat.

And, at long last after drooling over @shain's shakshukas I decided to try to make it myself.  I described it to Ronnie and he thought it sounded good so off I went to the basement to get a jar of the spicy tomatoes that I canned last summer. Made a great base.  I added onions and garlic along with cumin, salt and pepper.  Oh and some paprika and fresh cilantro and parsley.

I over cooked the eggs a tiny bit but they were still runny enough.

 

Sides were definitely not traditional.  I made some apple chicken sausage links, potato patties and toast.

@Shelby I'm delighted to hear that! Thanks for sharing.

An untoasted bread is indeed the more common side, better for soaking the sauce. But adding sausages into the shakshuka is actually quite common - most often merguez.

Potato crust quiche tonight. Weight watchers compliant. Shredded potato shell, eggs, fat free evaporated milk, sharp cheddar, lean prosciutto, sundried tomatoes, asparagus and broccoli. Served with salad. It's good but I cannot get spaghetti carbonara out of my head and there is no way to make that WW friendly, so I will eat frugally for the next few days and then have my carbonara on the weekend with my leftover points.

I made @Duvel's Frikadellen last night and they turned out great. I served them with rice and mushroom gravy. They got a big thumbs up so they are something that will go in my regular menu.

Mozzarella sticks with a pizza/marinara sauce I got at the same time as the ketchup

Fried jalapenos

(Not pictured is the vegetable platter that was picked up from the store, and of course barely touched) 

 

For dessert was some mini cheesecakes with either a cherry or chocolate topping

Crisp fried tempeh with a garlic and ginger glaze on stir fried noodles. My daughter cooked from something on TikTok, and I just chopped and stirred as I was told.

The chicken wing flat - not crispy, but slides right off the bone. Neck was there for the cook as well.

Cured a brisket for corned beef, tossed it in the sous vide hot tub for 48 hours and piled it on marble rye with mustard and a side of fries for dinner last night.
