A quick dinner.  Microwaved some cauliflower while cooking some frozen peas stove top and sautéing shallots and garlic. 

Tossed that into the food processor with a few basil leaves to make a purée 

Seared scallops in butter.

@Shelby– I keep meaning to tell you that I also have this dish!  Was it your grandma’s?  Mine was. 

 

@liamsaunt – everything you cook looks delicious and lovely, but that Persian rice is simply incredible!

 

So, I’ve been sick with some mystery ailment for about a month.  Three different medications, chest xrays, breathing treatments, etc.  Basically I am coughing my head off, running a low grade fever, and have no energy.  Not cooking much.  Not really even eating much.  A few recent lazy meals - rotisserie chicken:

I just made empanadas for dinner later .  Since I have not been able to locate frozen discos, I have to make them from scratch, so when I saw the tools shown I thought they would be a lot faster to make them. I should be old and wise enough to realize that there is always a catch, but I am just older.  The catch is that the press makes the pieces so small that i had to made a lot more and it takes a lot longer. A lot longer. Making one was easy but in order to use up the dough, I had to make close to 60 instead of a little over a dozen. The press seems to be intended more for dim sum sized dumplings instead of Puerto Rican ones.
