Served with rice, and a pretty giant salad; made the ginger/carrot salad dressing often seen on the salads in sushi bars. But I made it in the mini food processor, and it really needs the blender. Next time.

My sis brought me some pasta salad Friday and what she said was their last home grown tomato of the season. So, last night I had some pasta salad, tomato and a bit of the potato salad I'd thrown together the other day.

Yeah, not sure when they planted or what varieties. It may be just because of the extreme temperatures we had for a while. It was hard on all things growing.

 

I had baby potatoes that needed to get used up and I had bought a large container of tzatziki a while back. I cooked the potatoes and added some of the tzatziki and onion and it was delicious!

August already! So much going on, gardening, visitors, grandkids, and awaiting arrival of new grandbaby in the next few days!

On top of all the above, was dealing with tummy issues. Couldn't figure it out until I realized it was the +32C temperatures for a week! Altho' drinking a lot of water, it was not keeping up with the sweating!

However, I did manage to do some cooking, and finally some eating.

Saskatoon / Service berries time! A lot of folks with their own berry patches, whether sask. or raspberry, have had a lot of issues with larvae in the berries. I found a farm close by who spray for the flies that lay the eggs, so I grabbed 4 baskets. Made a lot of pies, shared with family and friends. Our soon-to-be mommy daughter wanted cherry pie, so she got one! Made 6 mini saskatoon pies and some PB roll-ups, a childhood fav.

Hubs is watching (simple) carbs, so chicken enchiladas made with strips of zucchini instead of tortillas. Very enjoyable, the zucchini worked well.

A couple more meals:
We have an outlet for meat, etc from Sysco, the company who supplies the restaurants in our area. I picked up a case of 24 Bacon Wrapped 8 oz AAA beef tenderloin steaks.
They were very good.

Had a crown pork roast in the freezer. Knew it would be some time before we have the family all together, so I cut it apart. Had a meal with pork cutlets, then the rest of the piece, I opened it flat, rubbed it with Trader Joes BBQ Rub and Seasoning with Coffee and Garlic, and roasted it in the oven. Made a couple meals.

A single rib, corn on the cob and new potatoes make a lovely meal

Shrimp sauteed with West African Citrus Spice (from Silk Road Spic Merchants), fresh peas, new potatoes - quick and easy meal. Temperatures finally down below +30C, and with the A/C on, I made a big pan of Moussaka. Shared 2 portions with a friend and a neighbor, and still have 2 portions in the freezer. We love Moussaka, memories of our midnight meals after performing in Workingmen clubs in Yorkshire area in the '70s!

First attempt at @Duvel emergency pizza. Pepperoni and kalamata olives. I don't have a steel so cooked the base in cast iron on the hob then whacked it under the broiler. Had to throw this one back in the pan to cook some more after I cut it. The dough was very tasty. Will make again.

 

Lessons learned: Heat the cast iron more and leave in longer, not enough char on the bottom. A bit more time under the broiler, too. Use less dough for each pizza and leave a bit less crust around the edges. Work on my shaping skills. A half recipe would be plenty for us. Does the dough freeze?

I have never tried to freeze it, but “leftovers”* (like an extra pizza) do reheated well in an medium hot oven or airfryer.

* made on purpose: I also have quite some slices for the next days as snacks.

I freeze pizza dough a lot.  Make it into a ball, wrap in saran and stick it in a ziplock.

We had quite a busy day to day. Our little black & white springer is quite unwell and we had to take him to a specialist vet about an hour away in Cambridgeshire.

I already had dinner lined up for our return and scaled down this recipe and adapted it for 2 people. https://thecozyapron.com/chicken-with-mushroom-sauce/
I added bacon and upped the garlic. Had no double (heavy) cream which isn’t in the recipe online, but it would have been added it if had been available. Turned out nice though and one worth a little trial and error. Funnily enough, cooking chicken with bacon, shallot, garlic and Porcini (Cep), it felt like I woken up in a seventies dinner party. I had no pappardelle to hand so it was served with Penne and black kale.

As a special treat Mrs T63 prepared her rich rice pudding. Cooked with double cream, (hence none for the chicken sauce), clotted cream, a couple of vanilla pods, full fat goats milk and some golden sugar. Nice way to finish a day that hasn’t been overly great.

Roasted five ears of real Jersey white corn, procured earlier in the day at the greenmarket. I'd never done this in the Steam Girl, but they came out great.

Buttered, served with a Greek salad, with greenmarket tomatoes, lettuce, cukes, onion, Bulgarian feta. Olives are hiding under it all.

 

Sometimes this is all we need in the heat (I did eat two ears of corn).
