Pasta con Costco, originally created to use up those huge jars of stuff you buy there. I'm not a member anymore so unfortunately no 4 bean salad, but the name lives on.

 

Semi-dried tomatoes, semi-dried olives in oil, roasted red pepper and artichoke hearts. Served with unexpected food gift tomatoes, bocconcini, and basil.

A few recent dinners.

Braised beef, pepper jack, cilantro, green onion tops and green Cholula quesadilla with a simple salad. Freezer gazpacho on the side.

Spinach and ricotta tortellini in a mushroom broth. Salad out of the shot.

Isn't it typical? Days after writing that prawn crackers aren't served in Chinese restaurants in China as they are in every 'Chinese' restaurant in the UK, they only go and serve me prawn crackers. In my defence, it was a Thai restaurant in China.

 

I visited with a friend who ordered. We had the aforementioned crackers; specifically Coconut Songkhla Prawn Crackers. The name has no mention of chilli, but they were spicy. Nicely so.

Other dishes were "Thai Emperor Pineapple Fried Rice" which came with came with yellow pestilence and pork floss.

* The lettuce  was celtuce tops aka AA choy or 油麦菜 (yóu mài cài).

 

It was all OK for a quick dinner - neither of us were particularly hungry. The chicken was by far the best dish - I'd go back for that alone.

First dinner cook at home in over 2 weeks:

Whole chicken, cut up and roasted with small potatoes, carrots, lemon. Leaving the breast whole like that means I hopefully won't overcook it (I didn't).

Easter Sunday lunch was the usual roast lamb but this time I chose to serve it with Greek flavours of olives and crumbled feta with fresh salad ‘leaves’. My husband dishes up the peas and makes sure we don’t have too little LOL.

This past week has been the Week of Shelby eating what she won't get to eat for a while starting tomorrow.

 

Panko fried shrimp--shrimp was on sale at Sam's.  I'm sad I didn't buy more because they were really sweet and good.

I ordered a few things from Goldbelly to cheer myself up lol.  Subs from White House Subs.  Good.  You get 4 huge sandwiches that we are still eating on.  Along with that I got a couple of things from Hebert's Specialty Meats-Duck and andouille gumbo and seafood étouffée.  I should be able to at least eat some of the soup parts and if I can't, it's an easy meal for me to make for Ronnie.

A lovely sunny Easter Sunday with some flower garden strolling and the first (woodruff flavored) ice cream of the season …

I buy them in a bag of 5kg and refill my potato storage container in the kitchen with it, so I can’t say for sure which floury potato was this batch. Normally in this region, it’s either Gala or Bintje

80F today in N Georgia. Got the pizza oven out. 
Pepperoni, castelvetrano olives, onion, garlic oil 

Pear, Gorgonzola, prosciutto, smoked Gouda, caramelized onions, hot honey.

Bryan Flannery saddle of lamb. Smoked over apple wood until 120F and then hard seared indoors to 135.

Served with smashed yukon golds and a romaine salad with shallots, dijon mustard and olive oil- sorry no pics.

Our dear friend known as the Croation Cuddler who now lives in Walla Walla Washington came for one night to visit 

We pulled some big guns.

Easter dinner - slow cooked ham, side of twice baked potatoes with sour cream, cheese, and bacon. Not actually twice baked, though- sous vide first, then baked. Pears and cornichons for garnishes.

Pork vindaloo (cubed pork loin chops, coconut vinegar, garlic, coriander, cumin, sirarakhong chili, turmeric, red onion, cashews, coconut milk, cilantro) and stir-fried green cabbage with fennel seeds (green cabbage, cumin & fennel & sesame seeds, onion, cayenne, garam masala, lemon juice) - served over rice
