Dinner 2023

@CantCookStillTry – I keep seeing your posts and meaning to tell you how glad I am to see you again!  As always, picking an emoji for your posts is always a debate with myself: laugh or like?  Seriously – I’m awfully happy to see you here again!  BTW – the burger kebabs and the “toppings”? Genius.

@Ann_T – I truly don’t have the words to say how much I want that roast beef and apple pie dinner.  (All except the peas – I’d have to sub in some Brussels sprouts – I’m just not a pea girl 😁.)

I thawed some BBQ Soup for dinner last nigh.  This is a beef stock-based vegetable soup that I make with the various BBQ meats that Mr. Kim brings home from competitions he judges.  We can’t possibly finish it all, so I freeze it and periodically pull an assortment out to make this soup.  It includes pork, rib meat, chicken, and brisket:

It's different every time, but always slightly sweet, tangy, and smoky.  Served with corn, tomatoes, and cornbread:

And some pickly stuff:

A few recent dinners:

Chicken and dumplings.

Chicken and mushroom pot pie with hasselback potato (sloppy presentation that in no way affected the taste).

Hummus, egg, pickled herring over toasted naan with a tomato, pickled red onion and purslane salad.

Sous Vide Lamb Chops finished on the BBQ.

The only side I wanted was mint sauce, but cooked rice and corn for hubby!

This is a simple, but highly popular dish. There is hardly a restaurant that doesn't offer it and none that couldn't make it if they were willing. In healthier times, I often made it myself.

农家小炒肉 (nóng jiā xiǎo chǎo ròu) or 青椒肉片 (qīng jiāo ròu piàn). The first means 'Farmhouse Stir-Fried Pork; the second, more descriptively means 'Green Chilli Pork Slices'. The dish originated in Hunan, our northern neighbouring province where I first tried it. Being Hunanese it is fiery hot. There are red chillies in there, too.

Spatchcocked a large roasting chicken this morning and seasoned with with garlic, dried oregano from our own garden,
lemon zest, salt, pepper and olive oil.
Moe took it out of the fridge for me, an hour before I got home.
I added the juice of a lemon and let it sit another 15 minutes while the grill heated.

Grilled over indirect heat.
Made roasted Greek potatoes in a cast iron skillet also on the grill.
Place the pan on the double wide top shelf.

The roasting on the közmatik just won't stop:

These were used for a nice roasted corn and pepper salsa.

Made a Hatch chile quesadilla (or two).  Used roasted Hatch chiles, a spreadable cheddar (with Hatch chiles, from Trader Joe's!), and another layer of bland white cheese on top.

Significant Eater is getting her Hatch chile fix - we also had green chile stew with Rio Zapa beans.

My eyes must deceive me - it looks like there's corn in that chicken dish!

😱 See your optician urgently!

What you are seeing is the beans which have sprouted to make the bean sprouts. 😎

Here, for clarification and as evidence in the great crn libel case, are 黄豆芽 (huáng dòu yá), literally 'yellow bean sprouts' although 黄豆 (huáng dòu) without its  (yá) means soy beans unless, of course, they are black soy beans).

Last night we had

assorted peppers, tomatoes, black olives with marjoram flowers, thyme and rosemary.

Great Northern bean salad cooked in the IP, vinaigrette, chervil, tarragon.

Pork tenderloin with a dusting of paprika, and enough leftover for sandwiches!

So you have a happy & productive herb gardeb? I love using the flowrs. I used to lighty batter the flowers and fry. The neighborhood kids called me ""the lady who frys flowers for us". Happy days :)

I used chervil vinegar made from a bounteous supply in early summer but it’s struggling now.  I  also enjoy using nasturtiums for various applications. The marjoram is very intense.  Fun using the different parts of an herb, basil flowers also make a fragrant vinegar.

It was 101 degrees outside today.  it was a little hotter standing next to the grill.  We had chicken (thighs) bulgogi along with rice and three kinds of kimchi.  Charlie asked for and got a salad to go with it.

I tried to make fried chicken and waffles, but the waffle maker had other ideas, so we ended up with fried chicken and pancakes instead. Side of slow sauteed carrots.
