Grilled chicken thighs, marinated with lime juice, fish sauce, black pepper, cayenne, and paprika

Mrs. C made a garbanzo bean salad with yogurt, mustard, celery, toasted almond slivers, parsley, dill, and probably some other things. Recipe describes it as potato salad-style garbanzo beans

Red Chileatole with mushrooms - You first build the base by dry roasting chiles (chipotle and ancho), tomatoes, onion, garlic and cumin and make a paste in the mixer. The base is mixed with vegetable broth and mixed mushrooms (oyster, shiitake, cremini, button, king oyster), thickened with a masa harina slurry and cooked. Finished with some cilantro.

Hmm. I think when I added "tandoori spice" (coriander, cumin, paprika, etc.) to the marinade it made sense to toss in some extra smoked paprika.

 

Obviously, I am not (usually) a traditionalist.  🙄

Gansu style 肉夹馍 (ròu jiā mó). This is from Shaanxi's neighbouring province of Gansu rather than from Xi'an, capital of Shaanxi. It uses a sort of flaky pastry bun rather than the more bready type I prefer. It is also made with fatty pork, tail fat being No. 1 choice.

 

Two were eaten so they couldn't have been bad but I still prefer my go to Xi'an beef with cumin style.

Salmon with dill and black pepper over mushroom and red pepper couscous. Salad of mixed greens, cucumber and basil thinnings.

Lettuces, dill and basil from the garden. With a glass of pinot noir.

Noodles tossed with 1 teaspoon butter and 1 teaspoon marmite. (Right after I finished eating  I dropped the bowl and it is now in three pieces!)😩

Southern Thai curry with red snapper, coconut milk and cream, tamarind, Thai basil, and a curry paste of dried chilies, bird chilies, lemongrass, shallot, garlic, fresh turmeric, and shrimp paste. Jasmine rice to go with.

Stir-fried mung bean sprouts with Chinese chives. Very high enjoyment to work ratio.

Lovely dinner. I'd have added some erlasting cucumbers alongside. We used to discuss an everlasting cucumber bowl here during the peak season. It was the cukes, onion, sugar and salt in a bowl. Just keep adding cukes to same bowl. I'd vary the salt element some years to fish sauce and add bitter orange marmalade for the sweet. I think @Kim Shook may have originated the term. Think @Shelby did it too.

At first I wasn't planning to do any cooking today but started feeling guilty.  Its the fourth for goodness sake,  so I did some ribs and salmon in the smoker. I already had made the potato salad and rib rub and sauce,  so it wasn't to much extra to do.  I had made the potato salad to see if we liked it enough to make again for Charlie's birthday next month. It is good... and different. Besides potatoes, it has sour cream, a little mayo., corn, bacon, jalapeño's and red onion.

Potato salad sounds good! I have had no decent corn in so long. Your ribs as always sure were excellent.

Chinese Skewers Surf and Turf (Skewers is one of the most pictographic Chinese characters - (chuàn).

 

Left: Spicy grilled king prawns (shell and head on)

Top: Inner Mongolian lamb skewers (lean and fat cubes alternating)

Right: Grilled scallops with garlic and vermicelli

Centre left: Chicken leg meat skewers

Wow, I am really jealous that you can get that via delivery. You find a lot of things in NY but good quality chuan'r that isn't abhorrently expensive is not one of them.

Just make vanilla pudding--I actually made it from scratch this time.  Nilla wafers on the bottom of the pan.  Top those with one layer of banana slices.  Then cover with pudding.  Repeat.  Then a layer of the Nilla wafers on top.  Dab the meringue on top.  Bake at 325 until the meringue gets brownish and done.   :)

Remind us please about this side dish? My searches under @Mmmpomps' name don't turn up anything that looks like this.

 

Also, how do you do your potato salad? I'm on a potato salad binge right now. It might be time to revive the Potato Salad Cook-Off!
