Two quickie dinners...

IMG_3570.jpeg.e92fafc2825065f13a5ce2636dd2cf16.jpeg

What a perspective...stir fried beef and vegetables (onion, mushroom, asparagus, carrots). A giant bowl of rice, evidently.

Rice and beans. Risotto cakes and Marcella beans, that is.

@Dejahyour paella looks excellent.  I love how much different seafood you used.

Hot wings with spinach and Mac and cheese

For Mardi Gras I had to pivot because my muffuletta kit didn't ship due to the weather conditions...sooooooo, muffuletta pasta salad with oysters, fries and fried crawfish tails.

Roasted potatoes with green beans, eggs, olives - in a vinaigrette with plenty of Dijon mustard and a little smoked paprika. It's a warm take on the classic French salad.

A casserole of mushrooms, zucchini, spinach, cheese. With mixed herbs, pepper, nutmeg and almonds.

Wine.

Wow! Both of these dishes look amazingly delicious. Once again, if you were feeding me, I’m sure I would become vegetarian without a problem. That is until you started throwing in the chickpeas and the eggplants.😂😂

@Shelby – thanks for the directions.  I printed them out and will use them when I thaw the roast.  And I just have to say that you KILLED the coating on those wings.  I can practically hear the crunch.  Well done!!

Ruffles? You have come down to live among us mortals

Not sure what Ruffles are, but these crisps are quite good (and my wife’s choice). Plus an excellent excuse for a third highball 🤗

That looks absolutely wonderful! Would you be willing to share your riff, please?

Had chicken breast that i filet opened,  soaked in a buttermilk ( homemade--Lemon juice and milk ) with Franks red hotsauce for 3 hrs. In a bag

I cut the breast in half/ better size.

Drained a bit of marinade and add 1 egg to the marinade

I used this for the double dip method--which I leave coated and rested on sheet pan  for 30 mins before frying

fried in Peanut oil/  was over powering would use a different oil next time..I guess they use soy oil

This is the recipe:

https://www.foodnetwork.com/recipes/hattie-bs-hot-chicken-3363027  we added Louisiana Hot sauce to the dip

I just mixed all the dry and added a ladle or two of the fry oil..then heated that up for the dipping chxn ..I kind like to add the fried chkn  as the hot dip foamed up

Oh I also pre heat oven to 300,  I have a drain rack.  this helps set the ckn

Cheers let me know if u need anything else.

Everything looks great, but if it's not too much work, could you post your recipe for barbeque shrimp in RecipeGullet?
