Dinner 2019

The temperature here has dropped nearly 30 degrees in the last couple of days to the mid 50’s.

Minestrone soup is on the menu.  Made beef broth in the IP then combined the soup ingredients and am slow cooking til dinner time.

Each so lovely.  Sad, it looks like they don't get along.

Picture taken before parsley and olive oil.  Much olive oil.  In seriousness one of my finest dinners in some while.  King salmon grilled with Gaspesian salmon rub.

Tonight's dinner was "by popular request".    So..

Stuffed celery

Chili,

And tantalized by our current thread, corn bread.

I  think stuffed celery can be a great appetizer -- or substitute for a full meal, depending on appetites and energy levels. That said, I'm curious about the stuffing. Peanut butter? Pimento cheese? Something else?

Dinner the other night while DH was off golfing.  A 3 oz steak (the other half was eaten the night before); mini-potatoes fried in duck fat; mushrooms and snow peas with a little green onion.

Grilled zucchini salad with basil, sill, olive oil, olives, lemon zest.

Eggplant parmigiana x lasagna - Grilled eggplants, tomato sauce with plenty of basil, motz, garlic. Handmade lasagna sheets to add some texture variation. It's not a real lasagna, in that that it's not intended to be cohesive. I do wish I had some more cheese on hand, I didn't have enough left for the top layer.

A second small casserole is waiting in the fridge to be baked later on.

I'm not sure why, but I've had limited interest in cooking recently. However, I had a friend over for the evening so I needed to make something. The original plan was to cook on the downstairs gas grill, but the rainy weather forced a change in plan.

- Pork Tenderloin, cooked SV

- Potato Salad

- Grilled Zucchini and Eggplant

- Fruit and Ice Cream with Chocolate Sauce for dessert (not pictured)

Tabbouleh - a more Sephardic version (i.e. more bulgur, or heartier than say a Lebanese version), based on a Claudia Roden recipe in The Book of Jewish Cooking.

Greek salad with pickled red onions.
