An easy work night dinner. I still had one of the Cornish Game Hens left that I had presalted with two others for Christmas.

 

Since they were so big, I only need to bone out two for Christmas dinner. I made one of Moe's favourites "Fred's Italian Chicken"

The last one was air dried in the fridge and then spatchcocked and drizzled with olive oil and seasoned with garlic,

lemon, red pepper flakes and fresh rosemary. and roasted last night for dinner.

My version of a dish we use to order when we lived in Sault Ste. Marie.

The owner of the restaurant "Fred" would sing Frank Sinatra and Dean Martin songs to a captive audience.

Most interesting.  I used to manufacture technology used in asparagus grading.  Shoprite had asparagus $1.99 a pound yesterday.  I passed.

Staying at my in-laws at a small village just north of Barcelona. My son requested pizza and with unknown flour in an unknown oven I was a bit nervous. Turned out satisfactory and both the little one and the in-laws requested a repetition in the upcoming days ...

Last night we had another get together. I neglected to get any photos of the BBQ but got a shot of the nibbles. There was Rump & Snags, Potato & Pasta salads, Green Salad, Stuffed potatos, Coleslaw & Garlic Bread. I am done with cooking/making for a bit!

Goats, Cheddar, Camembert, Jambon Serano, Kransky etc.. 

 

We go away for 5 days now so its been a mission to hand over / use up leftovers. Tonight I made my husband an 'Abominable Sandwich' for dinner. (He loves weird ass sandwiches, they make me sick in my mouth a little 🤷‍♀️🤢).

Cheap white bread, thin sliced leftover rump, pasta salad, mustard, spring onion and jalepeno with Massdaam & Cheddar. Dustbin Sammich 😂

It wasn't exactly dinner (maybe supper?), but part of a cauliflower I bought from my street corner guy for $2...

Was cooked to death in garlic, olive oil, red pepper flakes, and a little water, which when the cauliflower was mushy got a little stock to enhance.

Mezze rigatoni con cavolfiore e pecorino. Lots of black pepper, maybe some parmesan and some of the pasta water.

Used the remaining dough to bake pizzas.

 

Lightly spicy tomato sauce, mozzarella, goat milk feta, Kalamata olives, cherry tomatoes, basil.

I made duck confit and then Cassoulet for Christmas. We served 13 people and there is frozen leftovers for 4 people.

other meats in the cassoulet were the shredded confit, pork ribs, ventrache (french pancetta) and cubed boneless pork butt.

plated with a salsa verde and one of the many bottles enjoyed Vilmart champagne
