Tried a sheet pan quesadilla with low-carb lavash. A bit messy as the lavash was flimsy. The original recipe used overlapping tortillas. Good tasting though.

Cold temperatures tonight, so the oven was put to use: lemony Pork Piccata with spaghetti squash and peas/carrots. I had forgotten how very little xanthan gum is needed to thicken a sauce. Good thing I had Campbells Chicken broth and lots of lemons on hand to remedy the sauce which was pretty gooey!

This is not MY dinner. It isn't dinner time yet.

 

Twenty years ago, I met a lovely young Chinese woman who was then a student studying English in the local university. Her home town was down on southern coast of China, near the border with Vietnam. Her family were/are big in the seafood distribution business, shipping live seafood across China.

 

A few years later, she went off for further study in Australia where she acquired a master's degree and a husband, then settled. She has two lovely kids.

She was never a cook, but did once briefly part-own a restaurant in Melbourne. She looked after the business side, while a partner looked after the food.

Anyway, yesterday she sent me a message saying that she has started a routine of every Wednesday cooking and eating something she has never had before. Of course, she started with seafood.

So here are the images she sent me (posted here with her permission).

I told her it looked great (especially for a first effort) and, although she said she enjoyed it, she also said she still prefers Liuzhou food! The city's food. Not mine! Although, I did once cook for her and her sister and don't recall any complaints.

Steak and Cauli Broc Cheese. 

The steak was underdone for the Hub but he was starving and wouldn't let me rectify. Kept saying "I can do it" - I don't want you to tolerate it I want you to enjoy it!

Perfect for me though. 🤣

 

Was 380g of Rib reverse sear, cooked to 118f (which according to serious eats should have got me a medium rare) then seared for 1 minute each side. 30 secs edges, only my second try of this method so will try again.

Last night the rest of this week's salmon from the fish share got made into crispy salmon cakes with a salad.  Quite tasty. I had one cold leftover for lunch today and that was good too.  I like my fish share a lot, but you have to plan around the weather at this time of year.   I am guessing there is going to be no fish delivery next Monday if the current stormy and snowy weather forecast holds.

My s-i-l gave me a bag of chicken feet!
Threw them into the Instant pot for 40 minutes, and I had lovely stock and tender feet.

With the stock, I made wintermelon soup with re-hydrated shitaki mushrooms and some diced chicken.

My bowl had a couple of feet, and the rest I will simmer gently in black bean garlic and chili sauce.

Using my oven again as it was -25C with windchill -36. braised chicken with dates, roasted taters, carrots, and beets.
A squeeze of lemon brightens up the richness of the sauce. Enjoyed the combined flavours of ginger, coriander, sweet paprika,  cilantro, and dates.

Last night I made turkey chili and cheddar-scallion corn sticks.  I have not made chili in years because I had it in my head that I did not like it.  Turns out I was right, I don't like chili.  I'm hoping to foist off the leftovers on my brother in law this weekend.  The corn sticks were tasty though.

I am so with you there. Was fed too many horrible versions of it when my children were younger and we were invited to various potlucks. But your corn sticks do indeed look delicious.

Baked Salmon with Creamy Lemon Sauce. I don't usually like salmon because I find it fishy - much prefer steelhead trout.
However, no trout to be found but there was lovely salmon and big bunches of dill!

This was the first time I really enjoyed this fish - baked in a mixture of butter, honey, garlic, and dried dill. The creamy lemon sauce (mayo, sour cream, fresh dill, lemon juice) was great, with the salmon as well as the pan fried turnip fries.

Cabbage slaw with apples and pomegranate in yogurt and poppy seed dressing.

Sure.  It is an America's Test Kitchen recipe.  Stir together 2/3 cup flour, 1/3 cup cornmeal, 1/2 tsp. each baking powder and baking soda, and 1/4 tsp. salt.  In another bowl combine 1/3 cup sour cream, 2 tbsp. sugar, 1 egg, 3 tbsp melted and cooled butter and 2 tbsp. milk.  Mix together the two bowls, along with 1/2 cup cheddar cheese and 2 thinly sliced scallions, until just combined.  Bake at 400 degrees for 12-17 minutes.  Makes six corn sticks.  This recipe was written for muffins, but I have a corn stick pan, so used that instead.

 

Last night I made a Sicilian swordfish stew.
