Breakfast with a view at Tangalle, Sri Lanka: Mixed fruit juice, coconut sambol, rice with lentil fritters and potato curry. I could get used to that ...

Local bakery, Roan Mills posted this photo of a whole grain almond croissant the other day

 

 

So when my friends texted me this morning to see if I wanted anything, I knew exactly what to ask for:

Breakfast on Good Friday was my MIL's Hot Cross Buns:

She makes dozens of them every year and freezes them to distribute to family and friends.  I think they are a Betty Crocker Cookbook recipe, but she's been making them for at least 45 years, so I'm not positive.  They are delicious and freeze extremely well.  We usually unearth a final bag in July and enjoy them then.  I remember one time when my English stepdad @Ted Fairhead was alive, he was reminiscing about Hot Cross Buns that his mum made.  It was NOT Easter time or even spring, but she made them for him all the same.  It was when he was in treatment for cancer and didn't have much of an appetite, but he loved them and finished the batch in just a few days.  

 

This morning was more buns, a stale croissant (I'm making a breakfast casserole for dinner tonight and had one left over) and what will go into as many meals as possible in the next week:

That's 18 hard boiled (well, actually steamed, but hard steamed sounds weird) eggs to use up!  Breakfast:

Dorie Greenspan's Lower East Side Tart (recipe available online here) with all the stuff you'd serve with bagels: smoked salmon, cream cheese, capers, sliced red onions, tomatoes, fresh dill, but distributed in a pie crust, topped off with an egg/cream custard. and baked.

I still have a big bandage on my right (and very dominant) hand so this is certainly not my best work but no complaints.

Breakfast (or perhaps brunch today) was leftover leftovers from last night's dinner and none the worse for that. Stovies with a poached duck egg. The egg wasn't a leftover - whoever heard of leftover poached eggs?

Yesterday we had Korean seafood pancakes, leftover pizza and apple.

The pancakes are easy to make with a mix; some squid and green onion.  Sauce (not in picture) is a mix of honey, soy sauce, rice vinegar, sesame oil and toasted sesame seeds plus Korean chili powder to taste.
