I had a guy as a cube mate who had been a shipyard worker and had had a heart attack in the yard. He was not permitted to eat eggs and missed them greatly. He would often lament the loss of them in his diet and would tell me exactly how he liked to prepare them, sunny side up and then "blacken them with pepper". Albert died waiting for a heart transplant that just never materialized. To this day, whenever I have sunny side up eggs, as I did today (duck eggs), I dutifully "blacken them with pepper" in silent tribute to my old friend, Albert.

Guilty, as charged, Shelby, but not what you think. Deb and I always bet on the triple crown races. Not a lot, but always some. The local casinos (Foxwoods and Mohegan Sun) usually give out glasses for bets over $20.  We pre-bet the races and often use the glass for cocktails while we watch the race on TV later. We tried a mint julep,  but hated it so it will be mojitos for the derby, coming up. Here is the mint I am growing for that purpose.

This morning's simple breakfast. Pan fried (pig) blood sausage with black pepper and sea salt. Home made bread and butter. Coffee.

What I found in the fridge.  Hamburger bun, half of avocado, prosciutto that was briefly microwaved to make it crisp.  

Insanely delicious.  Want another one.

It's Cinco de Mayo today and I wanted to share two of my favorites I make. Recipes are at chef-think.com

 

The first is a breakfast chili relleno stuffed with eggs, cheese and pancetta served over a tomato chili sauce with queso fresco and a spicy (depending on the chorizo you use) chorizo hash browns with poblanos, red peppers and onions which is great with a poached egg on top.ChiliRenello.jpgChorizoHash05.jpg

RRO, I guess I could figger this out via Google but your post made me wonder.  Is the Australian cold and flu season May through October or something "upside-down" to what we experience in the Northern Hemisphere?

Breakfast for dinner here tonight: hash browns, scrambled eggs, toast and bacon.  Also making wild blueberry pancakes that Johnnybird can reheat for his breakfast when he arises and I am out of the house(I am a morning person and he believes morning begins at noon).

@robie; May - October. But me, I'm a 'getting sick' overachiever and can drop a cold at the height of summer, in the rosy bloom of spring, any time in the year, me. (Working an insanely stressful job and working it 80 hours a week may have something to do with that.)

But not for the next fortnight! I'm on holidays! (So decided to get a cold on the first day, naturally).

 

My tradition for beach holidays is that I take with me all the last bits of jam in the jars from my fridge and make scones for breakfast on the first morning. Which was just the thing after a sunrise walk along this beauty.
