Dinner 2024

Hen House market sometimes has some steaks on sale and so far they have always been very good. I was going to grill these yesterday but it rained all day and today it was too cold so they got cooked inside today. We had Pioneer Woman stuffed baked potatoes, a cut way down version of Ollie Gates BBQ beans and Southern Style green beans

Burger last night for dinner… it has beetroot within and beetroot crisps as a side.

Salad only tonight as nothing would make me cook inside or stand outside at the BBQ today. Yesterday was 30’C (86’F) which is a hot day., but today and for 3 days we are getting 38’C -40C (over 100’F to 104’F ) which is stifling.
Salad included all the usual suspects- chopped cucumbers, chopped tomatoes, green onion, peppers with figs, pomegranate and blue cheese

We had strawberries and plums with crushed cookie for a dessert after the light salad.

A King's Ransom!

A way to enjoy king crabs is not to look at the price tag and not to do the calculation to figure out how much is the meat per pound after shelling. This is to avoid indigestion.🤣

Fun week of dining, mostly out, mostly by myself as Significant Eater was out of town.

Monday, I went to Le French Diner, a place we'd recently tried to get into, but with a long wait we walked away. Alone, I was able to grab a seat.  (For those who may know, this was a place once called Zucco: Le Frech Diner, but Zucco sadly passed away, and when it finally reopened it was merely Le French Diner, but it's still darn good).

IMG_1553.thumb.jpeg.1784aa18d92b7192f31b82fca88db336.jpeg

Started with Socca, oily and salty, as it should be.  The picture on their IG of the duck dish is so much better than mine...

IMG_1554.thumb.jpeg.737fbe6f15af273003692c7a29b9b14c.jpeg

Duck breast with chicories and grapes.  This was one of the most properly cooked (huge) duck breasts I've had in a long time:

On Tuesday night, I met a friend at the newly opened DEMO, named after the nearby square, Father Demo Square.

Focaccia with olives and cherry tomatoes served with cultured butter and EVOO.

Lengua tonnata.

IMG_1561(1).jpeg.5cfacda56a83019549775fb807107efc.jpeg

Tortilla, with saffron aioli, trout roe and harissa chips.  Add a fantastic wine list and a lovely place for dinner.

Thursday night, I returned solo to Foul Witch, and again had a nice meal.

IMG_1567(1).jpeg.3435740e7cbed24a9a90de57e1e29172.jpeg

It included these humongous day boat scallops, which were incredible. Served with rhubarb, mandarinquat and on a bed of freekah. Then I had a pasta...

IMG_1568(1).jpeg.51def782c517d3f2d734b06e7f6aa8cc.jpeg

Oxtail fazzoletti, with lovage and horseradish. I was happily full, and happy I didn't order another course!

Significant Eater returned home yesterday, so I cooked...

IMG_1578(1).jpeg.d565137e465749731a36e64d92e99332.jpeg

Mise en place for a stir fry.

Cantonese-style pork with mixed vegetables.

Tried a different lasagna recipe, using Ricotta cheese instead of cottage cheese. The filling was lean ground beef and spicy Italian sausage.

Wow you all have been making awesome stuff! I haven't really cooked since my husband went into the care facility. I hope I'll adjust at some point and get back to doing something at least once a week.

Ronnie said he felt like eating fish for dinner yesterday.  I didn't want to fry it....and we just had fish piccata ....I remembered I had some leftover broth from cioppino last time so I rummaged in the freezers.  I found mussels, halibut pieces, scallops and squid.  I get nervous doing squid.  Ronnie doesn't much care for it unless it's fried--and fried well, not fried rubber bands.  I ran across a recipe for doing it in the IP.  Saute onions and garlic.  Add squid (cut into circles) and tentacles (sorry mom--she does not like things with tentacles lol), salt, pepper and a some red Chile flakes.  Cook for 4 mins.  Add half a jar of my canned tomatoes.  High pressure for 22 mins.  QR.  SO tender.  I wasn't going to put it all in the stew, but I did and Ronnie loved it.

Did not plan to have this meal be quite so . . . orange.

Coconut shrimp with tomatoes. Seared and removed jumbo shrimp. Sauteed onion, ginger, garlic, jalapeno chile and bay leaves, simmered with crushed tomato and grated coconut, and then finished with ground coriander, yogurt, and the shrimp. Forgot to add cilantro, even tho I just picked some up at the store. Oh well.

Baked sweet potatoes with ginger-garlic butter and Meyer lemon juice. Dunno why I never tried this before.

Champagne mangoes for dessert. I love mango season.

An imitation of Jerk Chicken, Rice and Peas.

I have never had Authentic so I have no idea if it was even close but it was yummy. Chicken was done in the air frier and the rice was baked.

Photo looks burnt but it didn't taste like ash I promise!

Also I only had a bean mix not kidney beans so a fair few subs along the way.

20240311_181739.thumb.jpg.9c85bcc5a5aaaf6e54375bcba0b20215.jpg

And yes it's an ungodly amount of rice. But he's an 11 year old stick of a football player and his appetite is INSATIABLE!

Edit to add: He also said he prefers rotisserie chicken so I'll add this recipe to the "not yet" pile 😒

It looks good enough to eat.  Here's how jerk chicken is cooked by one of my favorite, delicious jerks...

WOW!!!  great post. A week of feasts.  That duck breast is perfectly cooked.  Giving me a craving for duck.

Some recent meals this past week:

A dish we use to order at a little Italian restaurant in Buffalo, NY when we lived in Dunkirk.

Normally I would make this with halibut but last night I used Sablefish (black cod).

Friday night's dinner.

Last night's dinner.
PizzaNightMarch10th2024.thumb.jpg.81002e60d698fd45e10f91438c02947b.jpg
Wanted to make pizza for dinner, so I made a dough in the morning before leaving for work.
Used half of a levain I had in the fridge along with 2g of yeast in a 500g batch of dough.
Enough for Matt to make a large pizza and for me to make a small one for Moe and I to share.
I hadn't used the Ooni since last fall, but decided to use it last night since it was still daylight until after 7:00AM.
PizzaNightMarch10th20241.thumb.jpg.6f9d6184097b56da016bbc22a369a5c0.jpg
Started out to make a Margherita pizza, but also added some Kalamata olives.

Pollo en escabeche: Simmered chicken thighs in a mix of water and Mrs. C’s chicken stock with garlic cloves, black pepper, cumin, bay leaves, and Mexican oregano. Cooled and strained the flavorful stock. Rubbed the chicken with a spice paste of roasted garlic, cloves, allspice, cumin, black pepper, Mexican oregano, and cider vinegar. Sauteed white onion and roasted chile Poblano, and then simmered everything with the broth, more spice paste, and more vinegar.

Pepper slaw: sauteed white onion, chile Poblano, jalapenos, and Mexican oregano, simmered with cider vinegar and sugar, tossed with thinly-sliced cabbage, and then mellowed in the fridge for an hour or two.

Penne with chicken breast, sweet potatoes, scallions and sage with gorgonzola dolce. Pasta wasn’t cooked separately but directly together with sweet potatoes and scallions which is sometimes a bit tricky with the timing to not overcook everything but yields in a nice, creamy sauce.IMG_8953.thumb.jpeg.93c811814532ae3c31c042fdb85ecff2.jpeg

Clam and mustard greens soup. I added some newly acquired Chaoshan fish sauce to the chicken broth. Made a big difference to the umami levels.

Squid with sugar snap peas, garlic, ginger, chilli, fermented black beans, soy sauce, Shaoxing wine.

I found a one serving pack of the dry rub ribs from last month in the freezer when I was rummaging for seafood for chowder.

Finished with an apple habanero jelly glaze and served with an iceberg, tomato and cucumber salad.
