I made up a small batch of shepherd's pie yesterday, split it into 3 portions, and had one for dinner.

Ground lamb, mushrooms, onion, carrots, peas and herbs with just enough of a Habanero pepper to know it's there but not overpowering.

Covered with colcannon instead of plain mashed potatoes.

When I looked again just now, I did see some but they didn't have handles so I'd need to use tongs to take them out.  Considering how much oil it takes to submerge them, I will just stick to frying them flat.

I have never slow cooked anything.

 

but Ive had slow cooked food food @ friends.

 

was the loin meat tender and moist ?

 

a P.S.:  what did you not like about the iPot slow cooking ?

 

if I can find my 6 qt iPot glass cover 

 

I might giver it a try w those same ingredients .

The meat was tender but dry, as expected with loin cuts.

 

The iPot never got hot enough on low.  After 8 hours things were still uncooked.  Use Hi if you are going to try it.  And use shoulder or butt.

Surprisingly good and easy dinner, considering I've been spending the last few days whinging about how I no longer want to cook or eat.

 

I started with chopped slices of smoked pancetta from the Northern Waters Smokehaus, a local favorite (this stuff has been in the freezer for weeks). Cooked until it had started to brown and render its fat, then added chunks of asparagus and spattered all over the stove. I persevered, and when the asparagus had started to cook slightly added the contents of a can of Great Northern Beans.

Added enough of the canning liquid to get the sauce consistency I wanted, then threw in the basil that's started dying since I repotted it.

Delicious. First time I've used that stainless steel skillet in quite some time. And yes, I'm still using my black spatula.

I added some fresh ground Pasilla de Oaxaca, a splash of good quality balsamic vinegar, and a handful of baby spinach leaves ... a simple, quick, and easy to prepare dinner. Plus a 3 - 4 inch sized piece of the local bakery's sourdough baguette, as well.

@Shelby: THAT pizza you posted. I would LOVE that!

Our first winter storm arrived Tues - beginning with rain, then ice pellets, then snow and blizzard winds. Main highways and many provincial roads were closed due to ice and visibility issues. Semis were parked along the shoulders from yesterday afternoon to this morning.
It was a good day to stay home. I baked muffins all day, so supper was quick and easy.
Butter Chicken with commercial sauce. Eaten with Cardamom Basmati rice

A couple of my nieces who grew up working in our family restaurant were visiting from Calgary. Their request was for some dishes we had on our menu: #17 Soo's #17 - deep fried pork ribs  (with a few chicken balls!)   and some turned into #13, Sweet & Sour Pork Ribs

Shrimp Egg Foo Young was another favourite as was Boneless Almond Chicken:

Winnipeg Blue Bombs made it to the Grey Cup for the 5th year, but lost miserably in the last quarter! Supper was a winner tho- a single rib prime roast

Lots of colds and flu hitting friends, so out came my Hot 'n' Soup Soup pot. Supper was augmented with some air fryer chicken wings with VH Chili Mango sauce.

Local Co-Op had fresh lamb shanks - could never resist! Thai Coconut Curry Lamb Shanks

And finally, another dish we love, but definitely a vegetable you either love or hate: Shrimp and Bitter Melon (Foo Gua) with black bean garlic sauce over rice noodles.

We were without power from Tuesday around 6:00 PM until Wednesday just before 9:00 AM.

 

Big wind storm over most of the Island. During which, my computer died.

Matt hooked up my new computer while I was at work yesterday.

Downloaded three days worth of photos.

We had been planning to have beef bulgogi today since Tuesday.  Bulgogi tastes best when cooked over charcoal.  In the past I would convert my smoker because it was the only place I can use charcoal.  It takes time to set it up and change it back. Bulgogi is messy while cooking and clean-up isn't fun.  A few months ago, I ordered a small 18-inch  portable charcoal grill for doing bulgogi.  Today is the first time I have used it.  I put a grill mat over it to help make clean-up easier. We were waiting to get hungry before I started to grill . Instead it started to get dark and turn cold, so I grilled it then. I took this picture and in a few minutes I took another but by then it was too dark.

Broccoli and pitted olives, tossed with olive oil (and salt, for the broccoli) and then roasted. Garnished with a bit of rotisserie chicken. Mighty easy, mighty good.

The olives are an old can from Graber Olive House in Ontario, CA. I didn't know they'd closed during the pandemic shutdown and haven't reopened. I'd say I should cherish these two cans, but they're already old. The olives are very, very good though. This Wikipedia article suggests that the olives themselves would have come from Porterville, CA, near where I grew up and the source of my other favorite local olives.

Phanaeng Curry with Chicken and Kabocha Squash from Simple Thai Food by Leela Puunyaratabandhu - the curry is made by cooking chicken breast and diced kabocha squash in a mixture of coconut milk and cream, chicken broth, coconut oil, red curry paste, fish sauce, light brown sugar, fresno chili, makrut lime leaves and thai basil. Served over rice

We have an outlet for restaurant quality foods from Sysco. We used the supplier when we had the restaurant. Picked up a case of 24 eight oz strip loin steaks for $188.00. They were on the thin size, not like when I cut my own from a whole strip loin 😉 But they are perfect for quick fry

From the freezer, tail-end pieces of Halibut on sale a couple of months ago. The skin was left on, and they smelled very fishy thawed. Soaked them in cold salter water, dried off, and smeared with mayo. Breaded with cracker crumbs and pan-fried. Thank goodness the fishy smell was gone, the skin peeled off easily, and supper came together with corn and rice. Sauce was VH Mango Chili dip.

@Smithy  That's too bad that Graber's is closed!  I've never heard of them so I googled.  Looked like a really neat place to go tour and like you, tons of people raved about their olives.  On Yelp it says they are scheduled to reopen at the first of the year for whatever that's worth.....

Misfits has some jalapeño cheese sausages that I'm currently obsessed with.  I hope they keep selling them.  Cheesy cauliflower, cabbage salad and sautéed onions and peppers on the side.

In the never ending quest to come up with something low carb I found these mushrooms on sale.  I bought them out.  Made mushroom Swiss venison burgers out of 4 of them.  The picture was too hideous to post here but they tasted good.  I mean for not having a bun sigh lol.  I made "pizza" out of the rest of them.
