Needed some comfort food tonight - but family was not in the mood for neither German not Japanese, sooo …

 

„Sichuan“ dinner:

Da pan ji (大盘鸡)- ok, technically more of a Xinjiang dish, but the flavor profile matches pretty well …

Mapo dofu (麻婆豆腐)(with extra Sichuan peppercorn oil) …

Hope you are only in the hospital for follow-up work and not a relapse. Look forward to the day when you will be back on your feet and cooking!

A light supper for the post Thanksgiving taper😛.  Two dozen oysters and a bowl of gumbo.   The gumbo used SV turkey leg quarters and homemade andouille sausage.   The oysters were the best of the year - briny, fat and a steal at $15.99 for two dozen.

Trying to empty the freezer so some chili dogs.  Two things out.

Was the first meal in one of the new Falk pans.  Had the range apart cleaning it to list it for sale.

Rest of the kitchen is pretty much ripped out.  Gave it to my BIL for the shop on his farm.  No stove there so kept the range, but the surrounding granite was useful for him.  Sad to see the Bluestar go, but the three hours of cleaning to get it to look like that is exactly why it is going.

that looks like a wonderful Thanksgiving spread.

 

well thought out

 

the breast meat seems to have two different colors for the two different great muscles.

 

the larger a bit darker redish

 

what sort of bird did you purchase ?

 

did you notice any difference in flavor for each Br muscle ?

The dark area was richer tasting. this was a heritage black turkey breast from Joyce Farms

very interesting to see that color difference on the

 

two pectoral muscles.   guessing the free range turks 

 

flap their wings quite a bit more 

 

possibly more myoglobin in the pec. major.

Id SV'd   bone out th br and use the carcass for stock // gravy.

Dessert was eggnog ice-cream done in the Ninja creami.  Had some apples going south so I made apple pie filling and put that on top--good stuff

Absolutely - they are so good and it's nice to free up the stove top or oven space.  Here you go.  Keep in mind that you can adjust the sweetness by reducing the amount of brown sugar called for in the recipe.  I know that my preferred sweet potato level of sweetness is too much for some folks.  I'm one of those plebeians who loves the marshmallow-topped ones! 😁

Turkey soup for supper, stock/ broth made from meaty turkey bones in the IP.

Besides the turkey, the very last gleanings from the garden, kale, chard, sorrel, and from the pantry, peas, beans and tubettini pasta.

Dessert was a pear, apple cranberry galette with chopped walnuts.

@Shelby The teal looks amazing. I had it only a few times a while back, and still remember the flavor (it was at St John in London). I love duck and this was a real treat.
