Beef meatballs in a spicy, fresh tomato sauce. Finished with coriander leaf and Grana Padano. Spaghetti.

For Mardi Gras I had to pivot because my muffuletta kit didn't ship due to the weather conditions...sooooooo, muffuletta pasta salad with oysters, fries and fried crawfish tails.

Wow! Both of these dishes look amazingly delicious. Once again, if you were feeding me, I’m sure I would become vegetarian without a problem. That is until you started throwing in the chickpeas and the eggplants.😂😂

@Shelby – thanks for the directions.  I printed them out and will use them when I thaw the roast.  And I just have to say that you KILLED the coating on those wings.  I can practically hear the crunch.  Well done!!

 

@Captain – Joining the others in admiration for your wonderful looking fish pie!

Not sure what Ruffles are, but these crisps are quite good (and my wife’s choice). Plus an excellent excuse for a third highball 🤗

It might give you a clue if you know that their original slogan was Ruffles have Ridges. They are reinforced to stand up to thick dip.

Had chicken breast that i filet opened,  soaked in a buttermilk ( homemade--Lemon juice and milk ) with Franks red hotsauce for 3 hrs. In a bag

I cut the breast in half/ better size.

 

Drained a bit of marinade and add 1 egg to the marinade

I used this for the double dip method--which I leave coated and rested on sheet pan  for 30 mins before frying

 

fried in Peanut oil/  was over powering would use a different oil next time..I guess they use soy oil

I just mixed all the dry and added a ladle or two of the fry oil..then heated that up for the dipping chxn ..I kind like to add the fried chkn  as the hot dip foamed up

 

Oh I also pre heat oven to 300,  I have a drain rack.  this helps set the ckn

I don’t make dessert often but I was in a cooking challenge with corn as the featured ingredient. Sweet corn ice cream with caramel popcorn, and Brazilian corn cake.
