I know.  How did they do that.  We (I) didn't include the bag liquid on the plate....that would have been way too 'fishy' for me.  I should have opened the bag and taken it out before cooking....it is Scottish butter after all.

 Definitely not the breakfast I had envisioned. I wanted soft boiled eggs steamed in the Instant Pot. Apparently I was not awake enough to follow the proper procedure.  But the hens had worked hard to produce these eggs and the farmer had worked hard to collect them and my best friend had worked hard to bring them to me and so...

 Hard boiled eggs on crispbread with some harissa-mayo (to jumpstart my brain) and some apple slices.

Fava beans with cumin, chili and parsley.

Labneh with sumac.

A big drizzle of olive oil from last years harvest of our own tree.

Quick pickled onion with smoked paprika.

A warm and fluffy pita bread.

 Found some peppers languishing in my crisper drawer so fried them up with an onion,  livened  them up with some Aleppo pepper  and then turned them into breakfast with the addition of scrambled duck eggs.

 Flour tortilla folded in half and “glued” with some grated Parmesan.  The toppings are grated sharp cheddar, crispy bacon bits, sliced scallions and a generous shower of black pepper.

@Kim Shook, I used the recipe on this blog, but added more of the sauce, and I also sauted a white onion before sauteing the white part of the green onion.

Also finished with toasted sesame seeds. 

 

Bought some mini eggplants Wednesday and decided to use them this morning for breakfast.

Made a Chinese style spicy pork and eggplant dish. Moe is eating as I type and I will take it to work with me for lunch.

 My last duck egg which turned out to be a double yolker was scrambled with some prosciutto shank and served with sliced tomato and cucumber.

Frittata - onion, zucchini, freshly grated Parmesan, 5 large eggs, salt, pepper, EVOO, butter.

I've used the same pan (an old Circulon from Macy's) for 25+ years to make a frittata. This one started on the stove-top and finished in a 325℉ oven for about 6 minutes.

Polenta, fried egg, bacon, pecorino Romano, scallions.  Polenta was cooked in Instant Pot, pot in pot method high pressure for 20 minutes, natural release.
