Goose gravy over gf Rummo pasta. Its reminiscent of stroganoff.  Goose legs pressure cooked, onion, mushroom, garlic, gravy.

Starter:

Braised giant artichokes. Dipping sauce of mayo, yogurt, mustard, olive oil, lemon juice, garlic, s&p.

Chicken scarpariello, oven-braised in lieu of stove-top cooking.  Got a little crispy skin this way.

 

Served on a bed of Anson Mills coarse, rustic polenta integrale.

An unusual (for me) stir fry.  No noodles and the wife didn't want any onion or garlic or much sauce.  So char siu, baby bok choy, carrots, celery, snap peas and mushrooms.  Sauce was some cream sherry, a bit of soy and the water from the veggies, thickened with cornstarch.

Lentil stew with Piquillo sausage.

 

Gansu lentils stewed in chicken stock with onion, celery, and garlic. This I did in my rice cooker.

 

Piquillo sausage fried separately in a wok, then chopped up and added to the stew. The sausage gave the dish a nice chilli bite. I decided to eat it with some wholewheat bread with a spoon.

 

Actually, this wasn't what I intended but the frozen cod I definitely took out the freezer to accompany the lentils somehow wriggled back in. It's in the fridge now for tomorrow.

Had my mom’s cousins over last night since we won’t see them for Christmas. Made a charcuterie board, marinated olives, potato and Gruyère tart and mini mushroom tartlets.

Dinner last night was lamb kofta, green beans and a sort of tabbouleh salad. I thought it looked like it was meant that nothing was touching but it wasn’t planned that way.

I found the photo below taken some months ago. It was  chicken schnitzel with fried sweet potato slices and cooked mice… or rather beetroot from my garden.

Variation on Chickpea-Dal - Chickpeas, red onion, garlic and red lentils are cooked in vegetable broth and coconut milk. At the same time you make some seasoned/infused oil by quickly pan-frying garam masala, cilantro and red pepper flakes in some oil before balancing it with some lemon juice. Mix everything together, add cashew nuts and more cilantro and serve with some coconut yogurt

I’m currently on a gammon, ham, bacon trip and have either bought, or been gifted, a few gammon joints. I roasted one tonight, without first boiling, after buying it for a third off.
My argument is I am practicing for the Christmas joint. So tonight was roasted gammon with steamed potatoes, steamed spinach and peas. Shamrock sauce to serve.

It is really parsley sauce but given the Irish association with boiled bacon, where it is traditionally served, it is often, jokingly, referred to as Shamrock Sauce.

This was a "use everything you can in the fridge already" dinner. So that can turn into carbo laden stodge. Of the best kind:

Soup. Ham, potatoes, mushrooms, carrots, celery, leeks, onions, shallots, tomatoes, green chili.

Salad. Little gems, cucumbers, almost decent winter tiny tomatoes.. House-made blue cheese dressing.

 

Jamón serrano (Formaggio Essex) on focaccia (Pain d'Avignon).  Happy spouse.

 

Jacques would be proud (of the soup).

Roasted Indian-Spiced Vegetables with Lime-Cilantro Butter by a recipe from Diana Henry - potatoes, carrots, parsnip, cauliflower and red beets get oven roasted with garlic, cumin, coriander and turmeric. Finished with some compound butter made with chili, cilantro and lime juice and zest. Served with yoghurt and mango chutney
