Wow @Kim Shook so much good food and done w/ handicap of your Covid fatigue! I was confused at first wbout the corndogs with whomp biscuits but saw later in post that you made rolls with that. I did not know it existed. Can you describe?

Kimchi-Braised Short Ribs with Pappardelle from Korean American

A rare evening meal for me. And a rare ingredient - beef!  Picked up a pack of short ribs from a farmers market vendor that raises grass-fed beef.  I knew I'd be out all day yesterday so I cooked the braise the day before and this was very easy to toss together when I got home.

were the pappardelle homemade or do you buy it somewhere?

I get a Yen for it every once in awhile and I have made it several times and several ways and it just isn't the same as it used to be. I think it is the tuna. It just doesn't seem to be as rich a flavor as it used to be. And I've used all kinds of tuna from the nominal to the "oh my God, that can't be right" price range.

My plan was to make it but I ran low on eggs so I used the dried stuff from Trader Joe's.

Not bad but I'll make homemade to go with some of the leftovers.

Starting really to enjoy the emergency pizza dough - convenient & really nice baked results. 
 

We have a sleepover guest today, so preponed pizza & movie night, featuring Disneys new Strange World and …

 

Pizza with salami, mushrooms, ham and dots of Bolognese sauce, modeled after my once favourite pizza from a place I used to live next to (Da Sebio - nice memories) …

… plus a “Salami only” one (in the background), as for some reason all out houseguests seem not to be very adventurous eaters …

 

Texture was fluffy with a crispy crust, and the combination of Gouda and Raclette cheeses makes for an aromatic and melt-y topping.

Dal dhokli (split peas dal with spiced wholemeal pasta of sorts). Served with yogurt.

Filipino tortang talong (eggplant omelette). Served with rice and a sauce based on sesame paste, lime and charred green chilies.

I cut each eggplant in half, roast them, dip in the spiced ( cumin, turmeric, coriander, soy sauce, cilantro, scallions, garlic, etc.) egg batter and fry.

Chestnut pasta with poppy, butter, parmesan, nutmeg.

The eggplant dish -wow  I need to try. By fry do you mean pan fry or deep fry? I need to source chesnut flour. as when reading about such pasta I am eager but just have not. How is the dough to work with?

The eggplant dish is pan fried.

 

The pasta is very workable, it took more liquid than plain flour. It also kept al dante well. The flavor is quite mild, so I was happy I picked a light sauce.

first marinated in lemon juice and black pepper, then sauteed. The dips are fried garlic, mayo, and adobo from chiplote in adobo..

Next time will be in a taco with pico de gallo, avocado, and some adobo :).

@Kim ShookYou did super amazing with your cooking IMO!  Everything looks delicious.  Mr. Kim's meats--OMG yum.

 

@shainI would love to try some of your chestnut pasta.  

 

@farcegoFroglegs!  It's been a while since I've had any.  Yours look wonderful.

 

@blue_dolphinI've been craving that oxtail ragu that I made a while back.  No oxtails to be had around here--or if there are, they are outrageously expensive.  Thanks for the idea to use beef short ribs!  I might even have some in the freezer......

 

Life has been....a bit challenging this last week or so.  Still very tired all the time.  I'm always shocked when the sun starts rising in the morning -it feels like I just went to sleep lol. 

 

Breakfast--which always symbolizes that I couldn't think of anything more creative and/or I'm exhausted.  I did the eggs in the IP and was quite pleased with the ease--Ronnie likes his super runny so they were perfect for him.

Went to two grocery stores on Monday.  Hadn't been since just after Thanksgiving or maybe it was even before that.  One of the stores had a good sale on chicken breasts so we loaded up.  Brined them and vac packed and in the freezer now.  SV'd one for sandwiches.  SV keeps them so juicy.

Onion rings were frozen Nathan's brand.  I should have done them in the air fryer to make them more crisp.  Need to look up time and temp for next time.

The same store where we got the chicken breasts has the worst produce section.  I feel bad for them....I wouldn't leave stuff out that was all wrinkled and limp.  However, oddly, they had a whole pile of beautiful tomatillos!  I bought most of them and made an enchilada sauce.  A lot went in the freezer.  Had to make enchiladas, beans and stuffed peppers that night.

Yesterday was Ronnie's birthday.  He requested steaks.  Was going to do them on the grill but decided to just SV them and then do the screaming hot skillet thing.  He also wanted broccoli salad, corn --frozen from our garden--and a baked potato.
