Dinner 2023

Son asked for spaetzle with a mushroom sauce so this was dinner.

Rwvcpei.jpg

Only had a little rotkohl left in the freezer sadly and I actually made it with a bounty of brussel sprouts that someone had give me so it is an awful color and not enough, but still tasted great.

Taste matters most in family meal. What is your preferred spaetzle maker/method?

I use leftovers in whatever way works.  The brussel sprouts made a great slaw, mixed with a little red cabbage I had the color was bad but it was great.

My preferred way...well I've only done one way.  At one point I wanted to try them and found something just like this for $4

I realize it isn't super authentic, nor the best mechanism perhaps but it is the easiest and fastest fresh noodle you can make.  My boys also adore them.  My 11 year old made the ones in the picture actually, while my 13 year old fried the schnitzel.  Probably shouldn't even call it schnitzel as I used some Costco tenderloins that I triple butterflied and pounded flat raiding my freezer.

Another favourite. This time from Hunan. 孜然炒牛肉 (zī rán chǎo niú ròu), Cumin Beef and a very good version, too.

cuminbeef.thumb.jpg.f49f2db9864cc6135e55f0f2a03b61bc.jpg

This is very similar to my preferred 肉夹馍 (ròu jiā mó) filling. What's not to like?

If I could get the quality of takeout that you do for the price you pay, not sure I would cook very much at all. Take out options here are few and far between; not good, not healthy and stupidly expensive for what you get!

Juggling rep baseball, when I asked my wife what she wanted for our anniversary dinner, having to be out the door by 5:45, she said ‘something easy, how about breakfast for dinner’.  I had to do something a bit special..even under a time crunch.  You will note it looks like a dogs breakfast, but that’s a combination of my simple lack of care for plating and a need to get 3 kids fed and moving! Rest assured; it tasted exponentially better than it looked.

hash brown and smoked duck poutine (no curds, sadly) with a fried duck egg

Found some perfect cherry tomatoes at a farm stand today and had feta languishing in the fridge, so yes, I made what is now known as TikTok pasta. I have to admit, it is really good and pretty darn simple. Snipped the last remaining leaves of my basil plant to add last minute - will have to replace it tomorrow. Served over rotini, salad on the side. The picture is post bake, pre mush. I seldom manage to take "plate photos" because I serve family style and well, I live with two men who are not at all interested in me photographng their food! It was a tasty dinner for very little effort on my part.

So just roasted/baked little tomatoes mashed a bit with the add-ins? Hate for tik tokers to take credit - been around forever and SO tasty for little effort - max flavor.

Sometimes, simple is best. 农家小炒肉 (nóng jiā xiǎo chǎo ròu) can be translated as ‘peasant family fried meat’. As always, when the type of meat is unspecified, it means pork. Stir fried, thinly sliced pork tenderloin with hot green chillies, garlic, ginger, scallions Garlic chives, rice wine and soy sauce. 好吃! (hǎo chī!) literally ‘good eat’ but meaning ‘delicious’. Accompanied by rice, of course.

I would have thrown in a handful of fermented black soy beans, but it was good without them, too.

I can't believe it's the middle of August already.  It'll be dove season soon!  I feel like hunting season just ended 🙃

These first several meals are during the era of Ronnie needing soft foods.  He wanted a pork roast done in the slow cooker.  It was like 108 F outside and smelling that roast all day was so off-putting to me.  The things we do for love.  I think I ate a carrot or two and that was it.

Breakfast once again.

thumbnail_IMG_4812.jpg.5229c22b13ae649e57713003eb1a0a46.jpg

I turned the pork into enchiladas --that's my plate with the chips.

Hallelujah the last soft meal.  He informed me that for the next two weeks we would be eating nothing but meat so I better get my spaghetti fix in now lol.

BLT's--I was canning okra that day or else I would have baked bread.  That is on the docket for today.

The first meal with teeth Ronnie wanted steak.  Neglected to get a picture but I also had him grill a couple of chicken breasts to use for a big salad so that was last night along with Vivian Howards' corn/okra/zucchini fritters

Chocolate ice cream done in the ninja for dessert.  Must make more today that's good stuff.

So, tonight a bit of celebration in a lovely Swabian restaurant at out starting & finishing point Friedrichshafen

Beer to start with (bit thirsty) …

Geschmälzte Maultaschen with gravy for yours truly …

DW had the rib eye with herb butter and Parmigiano fries …

Ricotta, radish and nigella seeds.  The seeds offer a hint of onion.

Cauliflower, cubanelle peppers with oil cured black olives, salt cured capers, peperoncino, basil and parsley .  Anchovy, garlic, lemon vinaigrette.

Artichokes, ham and all of the above….eat the rainbow tonight!

Rainy day all day from 11 am onward. I got up earl;y enough to beat the rain as I had plans for the Big Easy! Haven't used it for quite a while, so I had to burn off the cobwebs and a bit of my hair!
Had pork butt strips marinating for the last 2 days for char siu. Will need lots to make baos with a friend visiting from New York.

The set up:
                                             CahrSiuinBigEasy1788.jpg.21682ec59e6d10d23e342aa9ab63a483.jpgChatSiuINBigEasy1789.jpg.98062370b0238322b2dffda01289de0f.jpg

45 minutes later:

                                           CharSiu45minutes1792.jpg.368d6231107ded05cedfe812f7d61773.jpgCharSiu1794.jpg.a06282a6b2b164ec2e975ede1c26225a.jpg

All packed and into the freezer as my friend's schedule changed and she won't arrive in town until the 13th. Char siu baos will be her lesson on the 15th.

It's quite chilly today with the rain, so I made a huge pot of Borscht. Delivered a big container to a house bound friend after we had some for lunch.
