A New Thing for dinner last night. Recipe in the state newspaper yesterday, really simple, and I had everything, so…

 

A can of cannellini beans, drained and rinsed; three cloves of garlic, minced; a tsp of salt and a tsp and a half of smoked paprika, stirred up with a quarter-cup olive oil. Bake at 400 for 30 minutes.

 

I decided that’d go well with chicken, and in the interest of not washing two dishes when I could get by with one, I browned them, then spooned the beans around them, and slid the whole thing in the oven.

 

Not half bad.

 

I forgot to take a pic. The recipe also called for a quarter cup chopped Kalamata olives, which I also forgot.

For a change you might want to make something like this. I make them quite often and I made them last Sunday for dinner. I left out the boiled egg and used about a tablespoon of mustard seed instead of Caraway. They were delicious.

Did two kinds of chicken wings tonight. One was Alton Brown's and the other one was cooked with sugar, oil, soy sauce, salt, pepper, paprika and beer. it didn't look anything like the demonstration nor had much flavor other than chicken.  I won't be keeping it.

Farfalle with shredded carrots in a creamy sauce - first sautéed the shredded carrots then added several
cups of water and cooked the farfalle directly with the carrots. Once al dente just added some cream, butter, capers, parsley, parmesan, sautéed pancetta and nutmeg

Definitely fall temperatures. Using the oven to warm things up.

 

A gift of a Kabocha squash = supper last night. Stuffed with ground beef mixture and topped with Tex-Mex shredded cheese. We share half a squash.

Walmart had fresh chickens on for $1.97 / lb. Stuffed one with stuffing made with a drying out bagel, celery, onion and mushroom. Chicken was seasoned with Pride of Szeged Rub for chicken. Roasted beets and sweet potato at the same time.

Not very colourful. I had planned to cook corn on the cob and zucchini but didn't bother.

I don't have steak very often, but yours has me drooling!

Pretty much. Kinda means from Calabria. Where you would definitely get a little more aggressive heat from peppers.

We hosted dinner for three of my cousins I haven't seen in near fifty years.

Too messy a meal for taking photos.

Cousins left Thursday morning so they'll experience Fiona at home.

@Shelby – thank you, ma’am, I am finally starting to feel better!  I’m hoping your recovery starts going a bit faster!  Those bacon wrapped doves look so good – I hope someday I get to taste one! 

 

@Annie_H – that pizza you posted back on the 9th looked and sounded absolutely gorgeous!

 

@Dejah – I join you and @Anna N and @CookBot in the love for liver.  Beef or chicken.  I almost never get it except sometimes one when I’m cutting up a chicken for frying, but much of the time not even then.  No one here likes it.  I hope everything goes well with your husband’s surgeries.  I had CT surgery in both hands some years ago and am SO glad I did.  The recovery wasn’t easy or short, but the relief and the return of dexterity and strength was SO welcome! 

 

@Steve Irby Happy Birthday!  That meal looks like I’d choose for my celebratory meal, too!

 

@Dante – wonderful looking chicken noodle soup!  I love how rich the broth looks.

 

@Senior Sea Kayaker – I’m quite envious of your crab!

 

Going back some because I’ve been MIA for a good bit.  Not doing much in the way of cooking or even eating, to be honest.  I’ve had a bad cold (tested twice – not COVID) and allergies and some unrelated medication changes and it’s caused a lot of general malaise including lots of fatigue!   Starting to come out of it for the most part now, I hope.

 

I dug some of his BBQ out of the freezer for Mr. Kim’s dinner some time ago – served with some roasted cauliflower and watermelon:

The cauliflower never gets as dark as I like it.  I cooked it at 450F for about 35 minutes this time. 

 

Last Friday, I picked up a rotisserie chicken at Costco.  I knew we had some turkey gravy in the freezer.  Served with rice, slaw, and probably the last of the good summer tomatoes. Mr. Kim’s plate:

I decided on a hot chicken sandwich:

It was ok, but not good August corn.  We’ll miss that. 

 

On Saturday, we had the same just-ok corn, good bread, some truly fantastic pears we got at Costco, and comfort food Hamburger Helper.  Except it wasn’t comforting at all.  The antibiotic has messed my mouth up and it just irritated my mouth and was tasteless:

Fresh Billy bread (a local bakery that sells through a few stores) – so incredibly good:

I was sorry that I was so wiped out that I neglected to slice it and freeze it for future French bread breakfasts.  Such a waste.

 

I made a yellow squash casserole that Jessica wanted me to try.  She hasn’t ever liked yellow squash but thought this one sounded good. It had cheese, sour cream, mayo, and a butter & crushed Ritz topping:

She and Mr. Kim both loved it.  Still tasted like squash to me.

 

A friend recommended these Bao buns at Costco:

I had them one night for dinner and they weren’t bad at all:

The dough was really good. The stuffing was ground rather than chopped and could have used a bit of a flavor punch.  Next time I’ll have a little hoisin for dipping.

 

Tuesday night was leftover burgers from a cookout at church along with grapes and some of my macaroni salad from the same cookout:

Gnocchi (store-bought Italian import) with grilled asparagus and a good quality Black Forest deli ham.  

 

Mostly olive oil and pasta water for sauce, two pats of butter to finish.  Ton of fresh ground pepper.

BJ's had one package of beef shanks that were too nice to pass up.  They were browned then pressure cooked with onion, lemon, satsuma, tomatoes and a spice blend which included Indian Coriander, Fennel, Cumin, Guajillo, Cardamom, Cinnamon, Turmeric, and Cloves.   Served with mashed potatoes, wilted spinach and sautéed mushrooms.

The brand is Granoro made in Bari, Italy.  We liked it a lot, soft and creamy.

Miso salmon with sun ramen noodles and a variety of vegetables from my CSA box: bok choy, shiitake and king oyster mushrooms, cone cabbage, and habanada peppers (supposedly they have all of the flavors of habanero peppers but without the heat).

Do you suppose those are cross between habaneros and banana peppers?

Linguine with prawns and smoked salmon. A generous pinch of red chilli flakes in the sauce gave a lovely warmth but went undetected by the family.
