**And Shoprite has chicken thighs on sale again this week.

That is a spectacular photo. As much as Canadian Geese are poop pests around here - they do look glorious in flight. Several lakes that we frequent have full time "poop picker uppers" thanks to these creatures. Good for the economy I guess!

It is a Lloyd pan. Mine is a 12x12 square. They make a lot of different sizes.  Their website is Lloyd pans. I did get mine on amazon, no shipping with Prime. It made a huge difference in browning the bottom and edges.

I brought back a nice jar of red Keta salmon caviar from Russia, so instead of just spooning it from the tub as usual, I thought I'd make a meal of it.

 

 

 

Plain caviar on buttery croutons

Spareribs in a spicy Szechuan bean sauce (cheaper even than wings!). And because one evidently needs a vegetable, and because I was kinda lazy last evening, green beans cooked along with the spareribs, which isn't such a bad way to overcook green beans, in my humble opinion.

 

Plated; and I need to take a better picture, what with the white plate and Jasmin rice screwing things up...

I had planed to make baked lemon-garlic haddock with crispy potato cakes, but after my niece spent the entire afternoon nagging me to change the menu, I made what she wanted, which was soy braised haddock with broccoli, red bell peppers and rice.  She'll be back on the college student ramen noodle diet in a few weeks so I figure I might as well make what she wants to eat now.

Very like chicken breast in texture, and oddly enough, kind of similar in flavour as well.  It's one of my faves. 

 

I just realized I forgot to answer your question about the maple meatball and egg mac and cheese-It was inspired by a recipe from the (highly recommended) Girl Carnivore blog.

Moe use to get to the occasional Montreal hockey game way back when, and he always raved about the hot dogs at the old Montreal Forum arena.
He loved the soft top-split buns.

For some reason he mentioned them this morning so I decided to find a recipe and make them.
Turns out they are really just a New England lobster roll/hot dog bun.
Used the Magic Mill to do all the work of kneading. So I didn't have to do anything too taxing on the neck.

Baked this afternoon and made Moe hot dogs for dinner.
Since I was grilling the wieners I just buttered the sides of the buns and toasted them on the grill.
I have a very happy husband. Said they were very close to what he remembered.

What a difference a day makes-at least temperature wise. Last nights meal was inspired by the most recent  cookoff, eG Cook-Off #88: Wings, when the outside temp was ~70F.  A stiff north breeze and ~20 degrees later soup moves into the mix.   The basil plants made one last contribution to dinner last night becoming a classic pesto served with Mediterranean  inspired chicken wings.  A full description is included on the cookoff thread.

Tonight we had a couple of soups in case  @liamsaunt  family was in the neighborhood.  She does the most incredible job of catering to her family's different taste!  Vegan cauliflower soup with cashew butter finished with a fried carrot nest and carrot greens.

And potato leek soup finished with sautéed shitake,  baby bella mushrooms' and Aleppo pepper flakes.

Grilled “bbq” chicken with grilled coriander cauliflower and ranch zucchini/squash. And a salad. The sauce for the cauliflower was kind of a riff on @Duvel’s recent wing sauce…

no yogurt in the house, but I blended sour cream with Duke’s mayo, cilantro, jalapeños, lime, coriander seed, and some yuzu kosho. The yuzu kosho is a nice touch in this kind of sauce.
