Breakfast 2021

Breakfast at a favorite place owned by HS friends of Jessica's.  It’s been around for many years serving just breakfast and lunch and has great “country” food.  Mr. Kim had the chicken fried steak and eggs:

I had eggs, sausage, and their perfect hashbrowns:

We shared a pancake:

Breakfast at home:

Still working through @Duvel's wonderful potato pancakes.

A breakfast for Mr. Kim:

Sage sausage and an egg.  Mine was sans sausage.

Shakshuka from a base/sauce that I previously had frozen. Some extra feta and chilies. Eaten from the pan with some soft crisp bread, as one does.

Kale & Mushroom Pot Pie from Simply Julia.  Recipe available online here.  I made a half recipe in a smaller pan.  Kale-phobes could easily use a different, fairly sturdy green. Not baby spinach.

I liked the use of puff pastry shapes to make a pretty topping, roasting the mushroom and onions and the quick, flavorful "sauce" of sour cream, Boursin and black pepper.

I cured half a brisket for the last 2 weeks ... then cooked SV 36h @ 68 oC. Makes a very nice & tender corned beef, and a lot of it 🤗

Today, breakfast burrito with said corned beef, swiss cheese and a fluffy omelette.

That looks delicious. If you haven't already shared your recipe and technique, please consider adding it to our corned beef topic so we can all try it out. @Wait. Wot, same goes for you. :)

Not sure if this counts as breakfast or lunch.  We ate at noon, but it was the first thing we had that morning.  @CantCookStillTry made sausage McMuffins the other night and I got a taste for one.  We only had one English muffin in the house (I can’t keep them long – I love them too much), so I made one sausage and egg muffin and one grilled sausage, egg, and cheese on bread.  I did the eggs in a ring:

Done:

So good!

The grilled one:

This was one honking sandwich.  Got eaten, though.

We also had some fruit:

This morning:

Strawberries (bought on Sunday), peaches, toast with my favorite Tiptree Little Scarlet preserves, hard cooked eggs, and sage sausage.

@Ann_T – I never thought of doing individual Shepherd’s pies, but I have some of those lion’s head-type onion soup bowls stashed up in the attic and they would be so perfect!  Thanks for the idea.

Yesterday:

I just love stuff piled up on buttered toast!

This morning:

Peaches, toasted dinner rolls, IP eggs.

Trader Joe's Organic Unsweetened Coconut Chips. They are a nice size and look pretty when toasted.

Thanks! Follow-up question - your toasting method? Oven, nuke? Such a nice size versus shreds.
