All appealing. Have not had Ritz in over 20 years  -I now need to reaquaint myself. But you must explain the apple cornbread. Never seen that before.

It was an old Gourmet recipe.  My wife says no cornmeal in it...maybe there should be.  Apple pieces are scored and placed in the batter. Turbinado sprinkled on top.

Rib eye, sous vide for 3h @ 54oC, then seared in beef fat with garlic and rosemary …

Plus the obligatory side dish: green beans, braised with tomato, onion and garlic, and finished with herb salt and Parmigiano …

Superbowl Hot Dog event!!

The dogs are all beef,  and broken into demographical sites  the two regionals with the addition of Stoysich were emulsified (  My preferred texture )

 

Local  were ground fine, some smoke,  sorry wasn't a fan,  these were a bit jerckyish,  Stoysich  just not in my wheel house

 

Rural --Wahoo was the smokiest  and David city  was the  saltiest

 

I think the two regional had the best texture, snap and taste  (  over all Koegel won out here --Usinger was up there )

 

Gonna go back a retaste ---as the week progresses

Had a big prime rib for our daughter's (twins) and soon to be son-in-laws birthday dinner on January 14th. We were leaving for Mexico two days later so put the bones and scraps in the freezer. Made a vat of beef barley soup yesterday, supplimemnted with a couple of pounds of stewing beef from the freezer. Dinner for us last night. Plus 3 more meals in the freezer and took some to a friend recovering from knee surgery along with some buns. Baked our buns yesterday and put the other half batch in the fridge after the first rising and baked them this morning. Everyone was happy.

Ordered delivery food from a local Thai place. Not up to cooking tonight.

 

Described by them as Tom Yum soup, Thai garlic pork ribs, pineapple and crab fried rice,  stir-fried cabbage.

 

The soup was good. The ribs were meaty and garlicky. The rice was OK, but no trace of crab taste and absolutely no discernable pineapple. It did have prawns, cashew nuts and a pork floss garnish, though.
