Not enough flies up here (Orillia) to justify the expense. but certainly entertaining. If it worked on mosquitoes it would be worth looking at, but I understand that's only for experts ☺️

I only use fleur de sel for a finishing salt so I've never much worried about measuring it out but I would expect it to vary depending on the brand and style.  

Serious Eats includes a generic "fleur de sel" in  this article that compares mass/volume measurements and shows fleur de sel comparable to Morton's kosher salt.

I have Jacobsen's pure flake sea salt that came in at 10 g/Tablespoon and a gros sel de Guérande (coarse grey sea salt) that's 14 g/Tablespoon

I’ve been using Diamond Crystal kosher salt forever. I was down to the end of a box so I bought another one. After cursing them for downsizing the box from 5lbs to 4lbs, I bought it went home.

I just ran out of an old 3lb box myself and bought the newly-designed small box. It is their regular Kosher salt, and it is without question much finer. I, too, can't distinguish it from table salt by feel, and, as a result, the same pinch gives a much saltier kick.

the top says ' salt flakes '  the bottom says coarse texture .

 

but what caught my eye :   ' less sodium'    

 

the only way it can have less sodium  , is to have potassium   KCL  or another  XxCL ?

I'll look out for this box, thanks. 

In the mean time I wrote an annoyed email to the company. Old man shakes fist at clouds.

 

Less sodium ... maybe per teaspoon? Since there's also less salt?

The photo I posted is the newly-designed Kosher salt box. You can still find the old 3lb design on Amazon, as @rotuts posted above. It's just so maddening.

I wrote to Diamond Crystal, and while they refused to acknowledge that they've lost their marbles, they did send me a coupon for a free box of salt. Just have to remember which one to look for.

Over here in the UK I’ve been seeking out and buying diamond crystal for years. My regular supplier was out of it when I restocked six months ago so I had to find a new one. Bought a case of nine boxes with the new branding shown above and it’s exactly the same salt as the old boxes, just with an easier to pour “spout”. 
 

really hope they don’t start sending me the new and “improved” version.

Based on what I read here, I bought some recently in part to see if the salt had changed, . I purchased the old-style, brown box marked as being for "Food Service Packaging."

 

I opened the box and checked the salt crystals, maybe it was just the power of suggestion, but the individual salt grains felt smaller. I want to examine them more carefully, and in direct comparison to my older stash, but it'll be a few days before that can be done.

 

Any suggestions on how to best compare individual salt crystals?  I thought I'd lay a few out from each box, alongside one another, photograph them with my high-quality camera and lenses, and compare the images.

Times article titled "What Happened to Diamond Crystal Kosher Salt?" dated August 1, 2023, "While the makeover has landed Diamond Crystal national distribution at retailers like Whole Foods and Trader Joe’s, the salt inside the boxes is unchanged. The three-pound box is $12.99 on Amazon (compared with $8 five years ago) $8.99 at Trader Joe’s, $10.29 at Whole Foods and $6.99 (before shipping) at the online restaurant supplier WebstaurantStore."

That won't work. Think about why we weigh ingredients ... I doubt it's possible to get volumes precise enough to make such a comparison.

since ten thousand years ago, Diamond has been "renown" aka "famous" for the crystal flakes of "kosher salt" vs. the "big chunks" of other "kosher salts"

 

it would be my guess that somehow a batch of cartons improperly labeled made it onto the production line . . .

altho . . . given the ability to scan/verify "codes" on every single box . . . makes that unlikely.

 

unless, , , , of course, , , , they knew and decided it was simply more trouble than it was worth to "fix" the issue.
