@ShelbyHAPPY BIRTHDAY, my friend!  How wonderful that you got to spend it with your mom!

 

@Marlene – your brisket looks fantastic.  Mr. Kim says to say hello.  I’m betting he’s been inspired by your posts that I’ve shown him and that there is a brisket in our near future. 

 

Breakfast for dinner a couple of nights ago:

Eggs on toast with bacon.  Those are some seriously messed up eggs.  I made the same breakfast for Mr. Kim and broke his yolks, too.  My egg mojo was just off that day.

Bad bad year for tomatoes this year. Weather, diseases, critter damages ---------. Still, got to have BLTs. Not too many days left for BLTs this year.

@dcarchBad year for tomatoes here, too.  You're not alone!  Beautiful presentation as always.

 

Reading this topic reminded me that I have tea salad kits downstairs and hadn't made any yet with garden tomatoes.

My mom and step dad got me Luke's Lobster Rolls with whoopee pies delivered to me for my birthday!!!  Ate them along with the salad and fries :)

Sterling Silver Inside Round made into Beef Stroganoff over egg pasta

Have had major appliance breakdowns: washer wouldn't spin (fixed on warranty), water tank leak at midnight (thank goodness for alarm sensors!), replaced, now in-sink garburator stopped.
Need comfort food: KD with addition of habanero cheese, and Costco Polish Beef weiners for supper.

@Ann_T– that is beautiful looking salsa!

 

We ended up at our favorite local “Mexican” restaurant (they are actually Honduran) last night.  Mr. Kim had his usual Enchiladas Supreme:

One beef, one chicken, one cheese, and one bean.  I branched out from my usual ground beef taco/burrito/taquito order:

Rib eye and onion tacos with beans and guacamole.  It was all delicious.

We had a few tomatoes left from the season (it's below freezing overnight here now) so why not make pasta.

 

So this is fresh tomatoes + vodka + sour cream + hot peppers and some fresh oregano and rosemary (the basil plant is gone)

It was really creamy so some bread to scoop all that extra sauce up :)

 

And thanks to the amazon sale and fact I've wanted a PacoJet for years... the Ninja Cremi is home...  Our first use of it is canned peaches frozen and spun:

I'm sure I've had paco jetted ice cream at resturants... it's so simple and so good.

 

Oh and the wine is a 2018 Pinot from Whitehall Lanes in Napa.

Pork schnitzel (from frozen), green beans, kraut, frozen broccoli, and egg noodles.  Served with whomp cornbread rolls topped with honey butter:

The schnitzel got a bit scorched because my oil was too hot when I put them in the pan.  Frozen broccoli is what I have to have when I want cooked broccoli nowadays with my potassium issue and we were pleasantly surprised.  I haven’t made frozen in probably 10+ years and it is far superior to the kind we had then.

It's quite tasty!  

 

A layer of toasted French bread, a layer of ham topped with Marchand de Vin sauce,  with a layer of chicken breast poached in herbed stock topped with Bearnaise sauce on top of that. 

 

I admit I made a vegan Bearnaise sauce for this to make it a bit less heavy this time.
